If you want to get fancy schmancy, use those French-style green beans. They're oh-so-thin, elegant, and delicate.

What You'll Need

  • 1 quart water
  • 1/2 teaspoon salt
  • 1 pound fresh green beans
  • 2 tablespoons butter
  • 1 tablespoon grated lemon rind
  • 1 1/2 teaspoons lemon juice
  • 1/2 teaspoon black pepper

What to Do

  1. Bring 1 quart water to a boil in a Dutch oven; add salt and beans. Cook 6 minutes; drain. Plunge into ice water to stop cooking process; drain.

  2. Melt butter in Dutch oven over medium heat; add beans, and saute 2 minutes. Add lemon rind, and saute 1 minute. Stir in lemon juice and pepper. Serve immediately.
