One, Two, Three Eggplant

C'mon, let's enjoy eggplant in some other recipe than eggplant Parmigiana (which I happen to love, too). This is a nice, light change of pace...and it's done one, two, three!
What You'll Need
- 1 teaspoon garlic powder
- 1/2 teaspoon dried basil
- 1 teaspoon salt
- 1/4 teaspoon pepper
- 1 medium-sized eggplant, cut into -inch-thick slices
- 1/2 cup olive oil
What to Do
- Preheat the grill to medium-high heat.
- In a small bowl, combine the garlic powder, basil, salt, and pepper.
- Brush both sides of the eggplant slices with the olive oil. Sprinkle half of the spice mixture on one side of the eggplant and grill for 5 minutes. Turn the eggplant and sprinkle with the remaining spice mixture. Continue grilling the eggplant for another 5 minutes or until fork tender.
I think this works better when the eggplant isn't peeled, because the skin helps it keep its shape while cooking.
