One, Two, Three Eggplant

C'mon, let's enjoy eggplant in some other recipe than eggplant Parmigiana (which I happen to love, too). This is a nice, light change of pace...and it's done one, two, three!

What You'll Need

  • 1 teaspoon garlic powder
  • 1/2 teaspoon dried basil
  • 1 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 medium-sized eggplant, cut into -inch-thick slices
  • 1/2 cup olive oil

What to Do

  1. Preheat the grill to medium-high heat.

  2. In a small bowl, combine the garlic powder, basil, salt, and pepper.

  3. Brush both sides of the eggplant slices with the olive oil. Sprinkle half of the spice mixture on one side of the eggplant and grill for 5 minutes. Turn the eggplant and sprinkle with the remaining spice mixture. Continue grilling the eggplant for another 5 minutes or until fork tender.


I think this works better when the eggplant isn't peeled, because the skin helps it keep its shape while cooking.
