We love spring! Why? Because this is the time of year when produce is at its peak! The radishes, asparagus, and corn all taste like Heaven. That's why we made them the stars of our recipe for Roasted Spring Vegetables. After one bite you'll want to make this recipe more than just a spring-fling; no matter what time of year it is, this recipe is something you'll crave. 

What You'll Need

  • 1/4 cup olive oil
  • 4 cloves garlic, minced
  • 3/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 12 ounces asparagus, washed, trimmed, and cut into 2-inch pieces
  • 8 radishes, washed, trimmed, and cut in half
  • 3 ears fresh corn, cut into 1-inch chunks
  • 1 tablespoon chopped fresh dill

What to Do

  1. Preheat oven to 400 degrees F. Coat a baking sheet with cooking spray.
  2. In a large bowl, combine olive oil, garlic, salt, and pepper; mix well. Add vegetables to mixture and toss until evenly coated. Spread in a single layer on prepared baking sheet.
  3. Bake 25 to 30 minutes, or until veggies start to brown. Sprinkle with dill and serve.

This Recipe is amazing!! All of the flavors go together. I made this recipe to go with my easter ham i made during quarantine 2020! I could only find frozen corn and asparagus and this recipe was still amazing.

Made this yesterday evening, along with Mr. Food's Chicken Francese. Interesting colors and textures, great flavors! A fabulous supper, and so easy to put on the table!

I wish I could print this recipe or save it so I could go to the kitchen and make it. It seems all of this is not for observes of Mr. Food as it use to be.

When preparing radishes for cooking, I like to leave maybe 1/4 inch of the stem in place, and halve the radish right through the stem. Just adds a little visual appeal, IMHO.

Several local stores here in the Midwest have fresh corn right now.

Well, corn is not a spring vegetable. Not sure where you'd get it this time of year.

Thankfully, Florida has an early growing season so you can get Sunshine Sweet Corn in your grocery store as early as Spring! Fresh sweet corn freezes well, so you can store it in your freezer and have it all year!

I luv roasted vegetables!! It is easy to do and also great when camping. This is also a great way to have variety, especially for those picky eaters, who just might try something new!

Great fresh corn is in Kroger stores right now from Florida.
