In a pickle for what to do with all the in season bargain cukes you've picked up at the market or farm stand? We have the easy solution with our Test Kitchen's recipe for Sweet and Spicy Pickles. Nothing beats the taste or the raves from our own homemade pickle chips!

What You'll Need

  • 4 cups white vinegar
  • 4 cups sugar
  • 1 tablespoon pickling spice
  • 1 jalapeño pepper, stem and seeds removed
  • 2 pounds cucumbers, sliced 1/8-inch thick

What to Do

  1. In a large saucepan over high heat, combine vinegar, sugar, pickling spice, and jalapeno pepper . Bring to a boil and add cucumber slices; return to a boil and cook 15 minutes, stirring occasionally.
  2. Remove from heat and allow to cool 15 to 20 minutes, or until lukewarm. Place in an airtight glass or plastic container and chill until ready to serve.




We like to use small Kirby cucumbers, but any type of cucumbers work here. And, for really crisp pickles, instead of cooking the cucumbers, just pour the cooked pickling mixture over the cucumber slices in a large heat-proof bowl. Allow to cool slightly, then cover and chill overnight. These should keep in the refrigerator for up to 1 month.

These go so well with almost any of our hamburgers, but we especially love 'em on our Good Old American Hamburger!

It looks interesting, I may try it some time. Have you tried dicing cucumbers (partially without skin and no centres), apples, tomatoes without centres and some onions. In a mixing bowl pour some sweet chilli sauce, lime juice and dash of pepper. If want something more spicy add in stripes of red chillies or red and green chillies (according to taste), Mix in the cut ingredients stir well and put in a handful of basil or mint. Enjoy!

Do you cut the pepper up or do you leave it wholr

In the instructions, we recommend removing the stem and seeds. After you do that, you can add the pepper any way you want. Thank you!

I found another recipe for dill pickles that is very much like this. You us english cukes, fresh dill, mustard seed, champanye ? vinegar, bay leaf, much less sugar and water. You bring the vinegar misture to a simmer not a boil and pour over cukes and let sit for 10 minutes. I thought is rather unique that two cooking shows would have almost the same pickle recipe. Got to try them both. I like the idea of adding the jalapena to the cukes with the dill would be oohhh so good too.
