What a super way to use up our harvest of tomatoes. And with the addition of a few off-the-shelf ingredients, this relish is ready in no time!
What You'll Need
- 4 large tomatoes, chopped
- 1 large onion, chopped
- 2 tablespoons chopped fresh jalapeño peppers
- 1/2 cup sugar
- 1/2 cup white vinegar
- 2 teaspoons salt
What to Do
- In a large pot, combine all the ingredients over medium heat; mix well. Cook for 30 to 35 minutes, or until thickened, stirring occasionally. Remove from the heat and allow to cool completely.
- Store in an airtight container and chill overnight before serving.
- Makes about 2 cups.
I like to add a little more jalapeño pepper for a really zippy tomato relish.
