Baked Reuben Dip

This super Baked Reuben Dip recipe has all the great taste of a deli favorite: the Reuben sandwich! This dip cooks up nice 'n' toasty in the oven, to get all those flavors melding together just right!
What You'll Need
- 1 (8-ounce) package cream cheese, softened
- 1/2 cup sour cream
- 1 (8-ounce) can sauerkraut, drained and chopped
- 1/2 pound deli sliced corned beef, finely chopped
- 1 cup (4-ounces) shredded Swiss cheese
- 1 tablespoon finely chopped onion
- 1 tablespoon ketchup
- 1 tablespoon spicy brown mustard
What to Do
- Preheat oven to 375 degrees F. Coat a 2-quart casserole dish with cooking spray.
- In large bowl, combine all ingredients; mix well, and spoon into casserole dish.
- Bake 25 to 30 minutes, or until bubbly and golden. Serve warm.

I've come across a number of reuben sandwich variants and this is a rather interesting one that I'd like to give a try. I do miss the use of Thousand Island dressing somewhere in the recipe and I'm wondering where or how it could be added. I don't think the ketchup and mustard is quite enough to mimic the real reuben taste. I think I'd use Bavarian sauerkraut (which has caraway seeds) and also toss in some seeds. The rye crackers or flatbread for dipping would be great. I'd use toasted cocktail rye or the rye Triscuit for this.

Made this for a party last night, using the crock pot directions for transporting ease, and was disappointed. I combined as directed, but felt it was rather bland, and didn't remind me of a Rueben. I added more drained kraut, salt, and caraway seeds. Didn't help much. Maybe it should be baked, because others seemed to like it. It was not objectionable and was nice and creamy with the cheeses and sour cream, but it could have been a plain cheese, or chicken dip.

This recipes sounds really good wonder how it would be if I exchanged the ketchup and mustard for thousand island dressing? I 'm going to make it first as written! Toasted rye bread cut into 1/4s for dipping sounds delicious

I was thinking the same thing-thousand island. And I will bake it in the oven till bubbly! For the dippers, I'm thinking rye crackers and butter crackers, maybe some marbled rye or pumpernickel.

Yes, you can make this Reuben Dip slow cooker. Just cook on low for 3 -4 hours, or high 1 - 2 hours. Enjoy!
