Coconut Lover's Cookie Bars

If you're a fan of all things coconut, then you've got to make these cookie bars. Our Coconut Lover's Cookie Bars feature a sugar cookie crust and a creamy, homemade, coconut frosting. They're great for potlucks too!
What You'll Need
- 3 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1/2 cup coconut oil
- 1 cup granulated sugar
- 1 egg
- 1/4 cup sour cream
- 1 teaspoon coconut extract
- 1 teaspoon vanilla extract
- FROSTING
- 5 tablespoons butter, softened
- 3 tablespoons milk
- 4 cups confectioners' sugar
- 3/4 cup sweetened coconut, divided
What to Do
- Preheat oven to 375 degrees F. Coat a 9- x 13-inch baking dish with cooking spray.
- In a medium bowl, combine flour, baking powder, and salt; set aside.
- In a large bowl, beat coconut oil and sugar until light and fluffy. Add egg, sour cream, coconut extract, and vanilla extract; mix well. Slowly beat in flour mixture until combined. Press dough evenly into baking dish.
- Bake 13 to 15 minutes or until edges are golden. Let cool.
- To make the Frosting, in a large bowl, beat butter, milk, coconut extract, and confectioners' sugar until smooth and creamy. Stir in 1/2 cup coconut. Spread frosting evenly over cookie bars and sprinkle with remaining 1/4 cup toasted coconut (see Note). Slice into bars and serve.
Notes
To toast coconut, place shredded coconut on a baking sheet and bake in preheated 375 degree oven 6 to 10 minutes or until golden. Let cool.
