Easy Short Ribs

Easy Short Ribs reigns supreme over easy stovetop rib recipes. Make it for supper tonight!

What You'll Need

  • 3 pounds beef short ribs
  • 1 small onion, chopped
  • 1 garlic clove, minced
  • 1 (6-ounce) can tomato paste
  • 1 cup ketchup
  • 3/4 cup packed light brown sugar
  • 1/2 cup white vinegar
  • 1/2 cup water
  • 2 tablespoons yellow mustard
  • 2 teaspoons salt

What to Do

  1. In a soup pot, brown ribs on all sides over medium-high heat. Reduce heat to low, cover, and cook 1 hour; drain.
  2. In a medium bowl, combine remaining ingredients; mix well and pour over ribs.
  3. Cover and cook 1-1/2 hours, or until beef is tender, stirring occasionally.

Hairybear2, just put a little oil in the pot to brown the ribs. buzzie73, the water gets mixed into the sauce. Use oil to brown the ribs. I guess that should have been in the recipe. These were good, but the cooking time was WAY off. My ribs were very meaty, so the entire process took 4 hours on the stove. I didn't drain the meat before adding the sauce, there wasn't that much grease. Delicious sauce, and PLENTY of it. However, I think a slow cooker would be more energy efficient.

jrowen38237: You are correct -- thanks for catching that! We've updated the recipe with the correct cooking time. For anyone else having trouble with this recipe, it is written correctly. The meat is first browned over medium-high heat, and then the heat is turned to low. Cover the pot and cook over low heat for one hour; the meat will not burn, and fat will drain into the pot. Drain the meat, and then add the water mixture and cook for another 1-1/2 hours.

Why do you not count the hour to cook the ribs alone as part of the total cooking time? I do like the idea of stove-top ribs and think this would work just as well with bottled bbq sauce. I usually cook mine in the crock-pot for hours, so this could be much faster. Thanks.

Okay, maybe it's just me but I eat with my eyes. If I can't see what it's supposed to look like, and if it doesn't look good when I can, I'm not making it. Is it too much to include a picture of the recipie? I've only been a subscriber here for a week or so and I'm beginning to wonder why I even bothered. I'm beginning to think it's more about the advertisers than it is about the food. Skip.

Is that what the 1/2 cup of water is for or does the fat melt down on the ribs? This is very confusing if you do it with nothing you would burn the meat and the pot and you would have a burndt taste to your ribs....

For the 1st part of the instructions you say brown the ribs on all sides & cook for 1 hour. what do you cook it in water or what? so you don't burn the ribs & the pot?
