Here's a meatloaf recipe that combines classic dinner tastes with farm fresh ingredients, like fresh and flavorful kale and onion. With our recipe for Farmhouse Meatloaf, you'll be helping your family eat their veggies, while giving them something they'll all love!

What You'll Need

  • 2 pounds ground beef
  • 2 cups finely chopped kale
  • 1/2 cup finely chopped onion
  • 1/2 cup Italian bread crumbs
  • 3/4 cup ketchup
  • 1 egg, lightly beaten
  • 1 1/2 teaspoons chopped fresh rosemary
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

What to Do

  1. Preheat oven to 350 degrees F. Coat a 9- x 5-inch loaf pan with cooking spray.
  2. In a large bowl, combine all ingredients; mix well. Press mixture into prepared pan.
  3. Bake 60 to 65 minutes, or until no longer pink in center. Let stand 10 minutes, then slice and serve.

I did substitute spinach for kale, and it tasted great! I love meatloaf and I liked the flavor and the ketchup in this one. The trick to meatloaf, as well as meatballs, is to not overwork it, or the meat gets too fine and dense. You can see in the picture that the meatloaf is loose and crumbly. that's the way you want it!

I'm sorry--it may just be a personal preference, but I don't like "loose and crumbly." That, to me, is not a meatloaf meatloaf should sit up to a fork similar to a hamburger steak, or pretty close to that texture.

If I wanted loose and crumbly, I'd get a "loose meat sandwich" (or 6) somewhere in Iowa! Yum!

I am going to use fresh baby spinach.

I've never used kale in meat loaf before, but I love trying new and different recipes. This was a winner. I love meat loaf, will make this again, family loved it.

Lived in Italy for 30 yrs. and I've never seen kale used in anything.

Their loss, I guess.

Farmhouse it has kale in it. Right.

What? You think kale is a pot plant maybe? If you don't think kale is a farm vegetable put collards in it.

The word "Farmhouse" indicates a more traditional classical approach. Meatloaf with kale ain't it!

You're telling your age. When we were children we didn't KNOW there was such a thing as kale. The times they are a changin and a LOT of people grow kale on the farm these days.

I stand by my original assessment that the recipe name is a misnomer. And who would guessed that kale is grown on farms, not in labs or back alleys.

The kale is what MAKES this "farmhouse". The ingredient list is 100% everyday meatloaf, except for the addition of kale.
