Wintry Baked Beef Stew

No matter the season, our Wintry Baked Beef Stew is a one-dish meal that delivers comfort. The secret ingredient to this stew's creamy, rich sauce is none other than quick-cooking tapioca.
What You'll Need
- 2 pounds beef stew meat, cut into 1-inch chunks
- 4 large carrots, peeled and cut into 1-inch chunks
- 4 potatoes, peeled and cut into 1-inch chunks
- 1 onion, chopped
- 2 cups tomato juice
- 1 cup water
- 3 tablespoons quick-cooking tapioca
- 1 teaspoon sugar
- 1 teaspoon salt
- 1/2 teaspoon black pepper
What to Do

Preheat oven to 350 degrees F. Coat a 9- x 13-inch baking dish or 2-quart roaster with cooking spray.

In a large bowl, combine beef, carrots, potatoes, and onion. In a medium bowl, combine tomato juice, water, tapioca, sugar, salt, and pepper; mix well. Pour tomato mixture over beef mixture; mix well then pour into prepared baking dish and cover with aluminum foil.

Bake 2 to 2-1/4 hours, or until beef is tender.

Hello! Yes, this recipe can be made in a slow cooker. Just cook on LOW for 8 to 9 hours or HIGH for 4 to 5 hours, or until beef is tender. Enjoy!

Can't find Tapioca quick cook here checked 3 walmarts, kroger and giant eagle stores - all were out of it. Could I use tapioca starch? or a Gluten Free option?

This was delicious and easy peasy..Best stew I ever made, so I was told ..ty Mr. Food!!..I followed the recipe exact, but I don't care for stew meat so I used boneless beef ribs, added some thyme and oregano..and kicked it up with a few red pepper flakes and a splash of red wine as suggested...I loved the idea of cooking this in the oven, this one is definitely a keeper!!

I remember this from wayyyyyyy back, although we cooked it for about 6 hours in the oven, and did add wine, like one of the other commenters mentioned. Scrumptious!!

Yes, you can cook this in a crockpot. I'd use a 5 to 6 quart crockpot. Spray the inside of the crockpot with cooking spray. Add the potatoes, carrots, onions, then the meat in that order. Then add the rest of the ingredients, except the water because a crockpot adds moisture as it cooks. Cook on low for 5 1/2 to 6 hours. I would add the tapioca after 4 hours.

I didn't have tomato juice so I pureed a can of diced tomatoes and added beef stock to get the 1 cup and also used 1cup of beef stock instead of water, turned out great. I love Mr Food's Recipes!!!

I made this for supper the other night, and it is, by far, the best beef stew I've ever made! It was simply delicious! It was even better the next day. If you're looking for a beef stew recipe, look no further. This one is tops!

This was delicious! We made it earlier in December on a snowy day and it hit the spot for the comfort food we were craving :) There were pleanty of left overs, so we froze them and enjoyed it again a few weeks later. Thanks for the wonderful recipe!

I made this on Sunday and it was very easy. Since I didn't have tapioca I used the same amount of corn starch. This is excellent, easy and smells great when its cooking. Very filling.
