Our homemade Quick Rolls are a cinch. They need no rolling and no proofing but they still give you bragging rights for scratch baking without the hard work.

What You'll Need

  • 2 cups self-rising flour
  • 1 cup milk (see Note)
  • 4 tablespoons mayonnaise
  • 1 tablespoon sugar

What to Do

  1. Preheat oven to 450 degrees F.
  2. In a large bowl, stir together all ingredients to form a soft dough. Spoon into a sprayed 12-cup muffin pan, distributing evenly.
  3. Bake 10 to 12 minutes, until rolls are golden.

Be sure to use whole milk only, not a reduced-fat milk.

Very good! Made them with Miracle Whip, added 1 Tbsp of oil as part of the one cup of milk. Also subbed 3 tsps of baking powder and one of salt with regular flour. Made a quick and easy after school snack.

If you do not have self rising flour what do you do?

For this recipe, you can substitute the 2 cups of self-rising flour with 2 cups of all-purpose flour, 3 teaspoons of baking powder, and 1 teaspoon of salt. Enjoy!

Will Miracle Whip work as well as mayonnaise?

Hi there! The Mr. Food Test Kitchen has not made this recipe with Miracle Whip. We are unsure of the results when substituting mayonnaise with Miracle Whip, as the ingredients in Miracle Whip differ. These biscuits use the fat in mayonnaise to make their consistency. If you do make these with Miracle Whip, let us know how it turns out for you. We would love to hear your feedback on this recipe. Enjoy!

Are these quick rolls like a biscuit in texture?

Yes, these rolls are very similar to a biscuit-like texture. Enjoy!

Not sure how you are supposed to 'sift' milk and mayo???

sift flour & sugar into milk & mayo mixture.

It says 'stir' not 'sift'....)

why can't 2% milk be used???

Not enough fat
