Strawberry Bread

In a jam for an easy and great-tasting homemade bread? Our Southern-style Strawberry Bread comes to the rescue...and with frozen strawberries baked right in, you can make it any time of year!
What You'll Need
- 1 (20-ounce) package frozen strawberries, thawed and mashed
- 2 cups sugar
- 1 cup vegetable oil
- 4 eggs
- 3 cups self-rising flour, divided
- 1 cup chopped pecans
What to Do
- Preheat oven to 350 degrees F. Coat two 9- x 5-inch loaf pans with cooking spray.
- In a large bowl, with an electric beater on low speed, beat strawberries, sugar, oil, and eggs until well mixed. Add 2-1/2 cups flour and continue beating until well combined.
- In a small bowl, toss pecans with remaining 1/2 cup flour then stir into strawberry mixture (see Note). Pour into prepared loaf pans.
- Bake 55 to 60 minutes, or until a toothpick inserted in center comes out clean. Cool slightly then remove to wire racks to cool completely.
Notes
- Mixing the pecans with the flour helps to keep the pecans floating in the batter so they don't fall to the bottom of the bread when baking.
- This bread is wonderful topped with a smear of cream cheese. Strawberry cream cheese is especially good!

Hi there! To substitute the self-rising flour use 3 cups of all purpose flour, 1-1/2 teaspoons of salt, and 4-1/2 teaspoons of baking powder.

Look for a product called WheyLow, can be found at natural food stores or online. It is much easier to use for baking, has a texture more like sugar & does not raise blood sugar. They have several products including brown sugar & even powdered sugar. Also look for their diabetic version called WheyLow D. I have switched completely to these products for baking since discovering them. Hope this helps.

Self rising flour is only used in the south so we have to add the right amount of baking powder and salt to regular flour Down south they use self rising flour to coat their chicken minute steaks veggies just about everything as it is also used as plain flour in the south but the baking powder and salt is not really healthy and should be used only when needed such as in baking also many times southern cooks will add additional baking powder and salt to a recipe on top of using self rising flour

I have not tried this recipe has I don't have strawberries on hand. However I do have raspberries. How many fresh raspberries would be needed in place of the frozen strawberries mentioned in this recipe? Also would the fresh raspberries still need to be mashed? Thanks.
