Fudgy Pistachio Cake

Okay, you love chocolate. If you love the flavor of pistachio, too, then Fudgy Pistachio Cake is the cake for you! And since it calls for a cake mix and a pudding mix, you'll be enjoying it in no time.

What You'll Need

  • 1 (18.25-ounce) package white cake mix
  • 1 (4-serving) package instant pistachio pudding and pie filling
  • 4 eggs
  • 1 cup water
  • 1/3 cup vegetable oil
  • 1/2 cup miniature candy-coated baking chocolate bits (see Notes)
  • 1/4 cup shelled pistachio nuts, chopped

What to Do

  1. Preheat oven to 350 degrees F. Coat a 10-inch Bundt pan with cooking spray then flour pan.
  2. In a large bowl, with an electric beater on medium speed, beat cake and pudding mixes, eggs, water, and oil for about 2 minutes, until thoroughly mixed. With a spoon, stir in chocolate bits and nuts. Pour batter into prepared pan.
  3. Bake 55 to 60 minutes, or until a wooden toothpick inserted in center comes out clean. Cool in pan 25 to 30 minutes then invert onto a wire rack to cool completely.


If you can't find miniature candy-coated chocolate bits, full-sized ones will work just as well. And before your family "finishes it off", you might want to "finish off" the cake by topping it with confectioners' sugar.

candy-coated baking chocolate bits is that like M&M???

I love this recipe and have been making if for many years. The pudding is not only for taste, but also to give the cake the green color. My recipe calls for chopped marashino cherries, but I will definately try the chocolate bits instead. I have also used a cupcake pan instead of the bundt pan and it worked beautifully.

I just wish you provided a picture with with the recipe and then it also be included with the print job. I am more likely to try a recipe by the visual. Thanks.

Chef 3508501: For this recipe, you should use both cake mix and pudding/pie filling. Some cake mixes are "made with pudding" -- you can either use that, or just a regular cake mix. The package of pudding/pie filling would be a separate ingredient. We hope that helps. Thank you for cooking with us!

today, cakes are made with or without pudding inside cakes! they were never made with pudding & we know how improvements are done!! above recipe calls for both cake mix & pudding, so if cake notes 1C pudding, then do you still add mix or deplete pudding??????? I have Pistacio pudding/pie mix & thought this would be good to use it!! I then recalled "comment" seciton, so thought I would ask you this as I'm sure many others will have ? upon reading recipe!! 6/11/11 Marg Temple
