Irish Potato Candy

Don't let the name fool 'ya. Our Irish Potato Candy is a sweet treat that doesn't contain potatoes at all, they just look like 'em. Be warned, this easy candy recipe is so addictive you're likely to eat the whole batch!
What You'll Need
- 1/2 stick butter, softened
- 4 ounces cream cheese, softened (see Note)
- 1 teaspoon vanilla extract
- 1 (16-ounce) package confectioners' sugar
- 1 (7-ounce) package sweetened flaked coconut (about 2-1/2 cups)
- 1 tablespoon ground cinnamon
What to Do

In a large bowl, cream together butter and cream cheese. Add vanilla and confectioners' sugar and beat until mixture forms a ball. With a spoon, stir in coconut. Roll mixture between your hands to form small potato-shaped candies, or roll into small balls.
- Place cinnamon in a shallow dish. Roll balls in cinnamon then place on a baking sheet, cover, and chill about 1 hour, or until firm.
Note

Make sure to use regular cream cheese, not a whipped or reduced-fat type. And if you prefer "dirtier potatoes," roll the candies a second time in additional cinnamon once chilled.

I have a question. How to store these candies and for how long can they be kept? I'd like to mail a batch to a friend, it may take three days to reach her though. Can you tell me if they'd be alright to send in mail? Thanks!

Hi Vondie! These would need to be stored in the refrigerator when not serving them. That being said we do NOT recommend sending a batch in the mail has they have butter and cream cheese and will likely go bad.

I can't believe i came across this recipe! I'm looking for Christmas snacks and this brings back memories. I used to make these as a kid growing up in Philly. I relocated years ago to Oklahoma and no one here has every heard of them. The cinnamon is not too strong because it's all sugar on the inside. However, The Philadelphia Irish created this recipe and you must like coconut with this one.
