Garden Tortellini Bake

Turn boring bagged tortellini into a hearty meal with this simple recipe. Just bake the tortellini with frozen vegetables, tomato sauce, and cheese and, in no time, you'll have a dinner the whole family will love. It's your own personal trip to the gardens of Italy!

What You'll Need

  • 1 (20-ounce) package refrigerated three-cheese tortellini
  • 1 (23-ounce) jar marinara sauce
  • 1 (16-ounce) package frozen Italian vegetables, thawed
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • 1 tablespoon sliced fresh basil
  • 1 cup shredded mozzarella cheese
  • 2 tablespoons grated Parmesan cheese

What to Do

  1. Preheat oven to 350 degrees F. Coat a 9- x 13-inch baking dish with cooking spray. 
  2. Cook tortellini according to package directions; drain.
  3. In a large bowl, toss tortellini with marinara sauce, vegetables, garlic powder, Italian seasoning, and basil. Spoon into baking dish.
  4. Bake, uncovered, 30 minutes. Remove from oven and sprinkle with mozzarella and Parmesan cheeses. Bake an additional 5 to 10 minutes or until heated through.

The firecracker slaw has been a big hit . I have made it twice in one week for two different events. That is saying something for me, the girl that could never boil water. (Smile)

Until you get an answer, you can look up the nutrition for yourself. Google the major ingredient (three cheese tortellini) and you'll find it has 50 grams of carbs in one cup. The recipe calls for a bit less than 2 cups of tortellini, so you're looking at around 100 grams for the entire recipe for one ingredient. Divide by 4 servings and you get 25 grams per person. This is just approximate, but it's still not exactly low carb.

Does anyone know how many grams of Carbs are in this dish? Recently diagnosed with Type 2 Diabetes and right now limited on carb intake until they get my blood sugar down and under control. Trying to find different recipes the entire family can eat that still fits with what mom needs! :) has a lot of recipes for people with diabetes. They are very tasteful and family friendly. Recipes have all vital stats for calories, carbs, etc. Hope this helps. Mr. Food website is good, just not for diabetics or people wanting exact stats on foods.
