New York Easy Cheesecake

There's no cheesecake like New York cheesecake. And there's no New York-style cheesecake recipe as easy as this. (Two more great reasons to love New York!)

What You'll Need

  • 3 (8-ounce) packages cream cheese, softened
  • 1 cup sugar
  • 4 eggs
  • 1 teaspoon vanilla extract
  • 2 prepared (9-inch) graham cracker pie crusts
  • TOPPING
  • 3 tablespoons sugar
  • 1 pint (16 ounces) sour cream
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon lemon juice

What to Do

  1. Preheat oven to 375 degrees F.

  2. In a large bowl, blend the cream cheese and 1 cup sugar with an electric mixer. Add eggs, one at a time, then 1 teaspoon of vanilla; mix well. Distribute mixture evenly between the pie crusts.
     
  3. Bake 40 to 45 minutes, or until firm. Remove from the oven and allow to cool 5 minutes.
     
  4. Meanwhile, in a medium bowl, beat the topping ingredients until well blended. Pour evenly over the pies and bake an additional 5 minutes.
     
  5. Cool, then refrigerate 6 hours before serving.

Have made this cheesecake for years!!! Its wonderful. :)

This is not the New York Recipe. For the filling, the correct recipe has 4- 8oz packages of cream cheese, 1- tbsp vanilla extract, 1- cup of sour cream, 3 Tbsp of flour, and it is baked at 325 degrees for 1 hour and 5 minutes to 1 hour and 10 minutes. Beat cream cheese, sugar, flour and vanilla at medium speed with mixer until well blended. Add eggs, 1 at a time, mixing on low speed after each addition, just until blended. Then, blend in sour cream, pour of crust. Bake till center is almost set. Run-Knife or metal spatula around rim of pan to loosen cake, cool before removing rim of pan. Refrigerate 4 hour or overnight.
