What You'll Need

  • 3 1/2 pounds chicken breast halves and thighs, skinned
  • 1 teaspoon garlic salt
  • 1/4 teaspoon pepper
  • 1 cup chicken broth
  • 1/2 teaspoon ground ginger
  • 1 (8-1/2-ounce) can sliced pineapple in heavy syrup, undrained
  • 1 (8-ounce) can sliced water chestnuts, drained
  • 4 green onions, diagonally sliced
  • 1/4 cup soy sauce
  • 1 tablespoon white vinegar
  • 1/4 cup cornstarch
  • mein noodles

What to Do

  1. Sprinkle chicken pieces with garlic salt and pepper; place in a 5-quart electric slow cooker.

  2. Combine chicken broth and ginger, stirring well. Drain pineapple, reserving syrup. Add syrup to broth mixture, stirring well; cut pineapple slices into fourths. Arrange pineapple and water chestnuts over chicken. Pour broth mixture over chicken. Cover and cook on HIGH setting 1 hour; reduce heat to LOW, and cook 6 to 7 more hours.

  3. Add green onions to mixture in slow ,cooker. Combine soy sauce, vinegar, and cornstarch, stirring until smooth. Stir into broth mixture, gently moving chicken pieces. Cover and cook on HIGH setting 10 minutes or until slightly thickened. Serve with chow mein noodles.

Notes

The slow cooker is the answer to a busy person's prayers-boy, do we know that! Remember: If you're cooking any type of meat, cook it on HIGH setting for 1 hour before reducing it to LOW setting to properly heat ingredients to the necessary temperature.

No. Thighs are usually not boneless and chicken halfs usually aren't either.

Do the chicken pieces need to be boneless?
