What You'll Need
- 2 celery stalks, sliced
- 2 carrots, sliced
- 8 cups chicken broth
- 1/2 teaspoon poultry seasoning
- 1/4 teaspoon black pepper
- 3 cups shredded cooked chicken
- 1 cup reduced-fat biscuit baking mix
- 5 tablespoons fat-free milk
- 2 teaspoons chopped fresh dill
What to Do
- Coat a soup pot with cooking spray and heat over medium-high heat. Add celery and carrots; sauté 5 to 6 minutes or until tender. Stir in broth, poultry seasoning, and pepper; bring to a boil. Stir in chicken.
- Meanwhile, in a medium bowl, make dumpling batter by mixing together biscuit baking mix, milk, and dill until well combined. Drop 6 equal spoonfuls of dumpling batter into boiling mixture. Reduce heat to low and simmer 5 minutes; cover and cook an additional 8 minutes or until dumplings are cooked through. Serve immediately.
Mr. Food Test Kitchen Tip:
- The key to plump dumplings is covering them for the second part of their cooking time, since the steam plumps them up. Also, this infuses the dumplings with all the flavors from the broth, so that every bite is delicious.
