Our Back-to-School Cookies make the perfect lunchbox treat or after-school snack. These easy-to-make cookies start out from a box of cake mix and get their extra-crunchiness from graham crackers and their chocolaty-sweetness from lots of chocolate chips. Kids of all ages will love them! 

What You'll Need

  • 1 (15.25-ounce) package yellow cake mix
  • 1/3 cup vegetable oil
  • 1/4 cup packed light brown sugar
  • 2 eggs
  • 10 graham cracker squares, coarsely crushed
  • 1/2 cup semisweet chocolate chips

What to Do

  1. Preheat oven to 350 degrees F. Coat baking sheets with cooking spray.
  2. In a large bowl with an electric mixer, beat cake mix, oil, brown sugar, and eggs. Stir in cracker crumbs and chocolate chips. Drop by teaspoonfuls onto baking sheets. 
  3. Bake 12 to 14 minutes, or until golden around edges; remove cookies to wire racks to cool completely.




These homemade cookies freeze really well, so go ahead and make an extra batch to keep on hand.

Can you u add nuts

Oh, these are so good. We mixed it up a bit and used semi sweet/ milk choc chips ( I only had a little of each).. What a treat.. bite size yummies are what the kiddos called them. With the added graham crackers that just tops it all off.. next time I make these I will put choc chips/ butterscotch chips and see what they think.. I stored them in an air tight container and they stayed soft. The only thing I found was hard was the sticky dough..It was ike paste.. but after I added the choc chips/ g. cracker it was a lot easier to work with.
