Butter Meltaways

These little meltaways scream buttery, melty goodness with every blissful bite, so get ready for 'em! You might have to hide these guys because they disappear in seconds... at least they do around the Mr. Food Test Kitchen!
What You'll Need
- 1 cup butter, softened
- 1/3 cup, plus 3 cups sifted Confectioners' sugar
- 1 1/4 cups all-purpose flour
- 3/4 cup cornstarch
- 2 1/2 tablespoons lemon juice
- 2 tablespoons milk
- 1 drop of red or yellow liquid food color (optional)
What to Do

Beat butter at medium speed with an electric beater until creamy; gradually add 1/3 cup Confectioners' sugar, beating well. Combine flour and cornstarch; gradually add to butter mixture, beating just until blended. Chill dough. Shape into 2 (6-inch) logs; wrap in wax paper dusted with powdered sugar. Chill at least 4 hours.

Preheat oven to 350 degrees F. Unwrap dough. Cut each log into 18 slices; place slices 2 inches apart on greased cookie sheets. Bake 8 minutes. Transfer to wire racks to cool completely.

Meanwhile, combine 3 cups Confectioners' sugar, lemon juice, milk and food color; stir well. Spread cooled cookies with Lemon Frosting.
Notes
One drop of food color goes a long way! To get the right amount, drop food color on a plate, and transfer it to the frosting with a wooden toothpick. This way, you'll be able to control the color you want.
