Cookie Jar Tea Cakes

A long-lasting tea cake is a hard cookie that's perfect for the cookie jar!

What You'll Need

  • 1 cup granulated sugar
  • 1/2 cup (1 stick) butter, softened
  • 1 egg
  • 1/2 teaspoon vanilla extract
  • 2 1/2 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • Confectioners' sugar
  • 1 (12-ounces) package semisweet chocolate chips, melted

What to Do

  1. Preheat the oven to 350 degree F. In a large bowl, with an electric beater on medium speed, cream the granulated sugar and butter until smooth. Add the egg and vanilla, beating well. With a spoon, stir in the flour and baking soda until the batter is dry and crumbly. Using your hands, work the dough for 4 to 5 minutes, or until a smooth, stiff dough forms.

  2. Lightly dust a work surface with confectioners' sugar. Using a rolling pin, roll the dough to a 1/8 -inch thickness. Cut into 2-inch round cookies and bake on ungreased cookie sheets for 10 to 12 minutes, or until golden. Allow to cool slightly, then remove to wire racks to cool completely.

  3. Turn half of the cookies over and spread the flat sides equally with the melted chocolate. Top each with another cookie, forming sandwiches. Allow to cool completely until the chocolate is set.

  4. Serve, or store in an airtight container until ready to serve.

    Makes about 4 dozen.

Notes

Remember to roll out the cookies nice and thin. Then they'll get nice and crisp when baking. And if there's some leftover chocolate, drizzle it over the finished cookies to give them an even fancier look.
