Double Chocolate Cookies

If you love chocolate and homemade cookies, than what could be yummier than a double dose of chocolate flavor with these easy cookies made from...a cake mix! You just have to try em!
What You'll Need
- 1 (18-1/4-ounce) package chocolate cake mix
- 1/2 cup vegetable oil
- 2 large eggs
- 6 ounces semisweet chocolate chips
- 1/2 cup chopped pecans
What to Do
- Preheat oven to 350 degrees F.
- In a large bowl with an electric mixer on medium speed, beat together cake mix, vegetable oil, and eggs, until batter is smooth.
- Stir in chocolate chips and pecans. Drop by heaping teaspoonfuls onto lightly greased baking sheets.
- Bake 8 to 10 minutes. Remove to wire racks to cool.

Melt a few caramels and drizzle on top and between pecans...then they're like Turtle Cookies!

OMG!!! Soooo frigg'in good!!! I was so skeptical...because of the cake mix... but this will be a regular in my house... Where have you been all my life??? -) For those that said their cookies stuck... use a non stick pan...-)

I make these weekly trying different varieties of mixes and add ins. I have made chocolate with chocolate chips, pecans and shredded coconut kind of like a german chocolate. Today I used a yellow cake mix and a chocolate cake mix. Divided the batters. In one of the yellow I added chocolate chips and m&m's, in the other half of the yellow I mixed in peanut butter, peanut butter chips and reese's pieces. For the chocolate I put white chocolate chips in one half of the batter and in the other half of the batter I used reese's pieces and peanut butter chips. I hate to say it but I had one of each and they were delish!

It's a rainy, drippy early fall day so we stayed indoors and made these cookies. OMG! They are absolutely delicious and soooo easy. Our 12 year old neighbor, who stopped by for a visit, has already asked us to make sure and give the recipe to his mom. One note... when melting the caramels we added about 1/4 cup evaporated milk to 1 bag ( 14 oz) of Kraft caramels so that the drizzzle would stay softer and less chewy when it cooled on the cookie. (The leftover went into the fridge to top some bread pudding or apple crisp later in the season.)

I use cake mixes every once in a while for cookies and they are pretty darned good. I have a cookbook using nothing but cake mixes, and cookies have a notable place in it.

I made "these" cookies sometimes twice a week!1 SOOOO easy and SOOOO good!! Have not used the chocolate mix but use yellow and add chocolate chips........ I bake mine a little longer - just according to how your oven bakes.....

Since there is no liquid other than the eggs and oil, these will be chewy. I think that shows up on the video when one is pulled apart.
