What You'll Need

  • 1 pound elbow macaroni
  • 6 hard-boiled eggs, chopped
  • 1 cup chopped celery
  • 2 cups mayonnaise
  • 4 cups cooked turkey chunks
  • 1 teaspoon salt
  • 1 teaspoon black pepper

What to Do

  1. In a large pot of boiling water, cook macaroni just until tender; drain, cool, and place in a large bowl.

  2. Add remaining ingredients and mix together. Serve immediately or refrigerate until ready to serve.

Notes

If making this in advance, you may need to add extra mayonnaise before serving. For a different taste treat you may want to add 1/2 teaspoon celery seed, or 1 teaspoon dried dillweed or basil.

Herb Crusted Lamb with Mint Sauce

Instead of cooking ham or prime rib for Easter, why not try something new this year? Our Herb-Crusted Lamb with Mint Sauce may look and sound fancy, but it's really easy to do. It's basically a rack of lamb that's coated with herbs and spices before it's roasted to perfection. Just before serving, it's finished off with a mint-wine reduction. The end result is an Easter-worthy main dish that'll impress everyone at the table.
