Get ready for a boatful of flavor with this easy seafood recipe sent to us by Lidia in California. She's named them Big Catch Tilapia Boats, because the tilapia fillets are brimming with so many yummy veggies and shrimp, they look like boats filled with a big catch of fish! We bet you'll love the crunchy crumb topping, too!
What You'll Need
- 8 frozen tilapia fillets, thawed (about 3 pounds total)
- 1 1/2 tablespoons seasoning salt
- 5 tablespoons butter, divided
- 1 (16-ounce) package frozen corn
- 1 (16-ounce) package frozen peas
- 1/2 tablespoon minced garlic
- 1 (8-ounce) package cream cheese, at room temperature
- Juice of 1 lime
- Zest of 1 lime
- 1 cup Japanese-style bread crumbs (Panko)
- 3 cups frozen cooked small shrimp
What to Do
- Preheat oven to 400 degrees F.
- Season fish on both sides with 1 tablespoon seasoning salt. Place on a baking sheet; set aside.
- In a large skillet, melt 4 tablespoons butter; saute corn and peas about 4 minutes; add garlic and saute 2 more minutes. Add cream cheese, lime juice, lime zest, remaining seasoning salt, 1/2 cup bread crumbs, and shrimp; saute another 4 minutes, or until flavors are well combined. Place 1/8 of filling in center of each fillet.
- In a small microwaveable bowl, melt remaining butter in microwave. Mix in remaining bread crumbs. Sprinkle evenly over fillets.
- Bake 20 minutes, or until golden.
Bass fillets can be substituted for the tilapia and imitation crab for the bay shrimp. Also, Old Bay seasoning is a great substitute for the seasoning salt.
