Barbecue Salmon Salad

We had to make extra of this Barbecue Salmon Salad because the Test Kitchen could not get enough! This salmon is the most delicious we've ever had. The sweet barbecue compliments the buttery, creamy, perfectly baked salmon in a way that's hard to describe. Best salmon recipe ever? We think so.

What You'll Need

  • 2 (6-ounce) salmon filets
  • 1/4 teaspoon onion powder
  • 1/4 cup barbecue sauce
  • 1/2 cup ranch dressing
  • 1/2 avocado, pitted and peeled
  • 4 cups chopped romaine lettuce
  • 1/4 cup frozen corn, thawed
  • 1 tablespoon chopped red onion
  • 1/4 cup cucumber, peeled and diced

What to Do

  1. Preheat oven to 350 degrees F. Coat a baking sheet with cooking spray.
  2. Place salmon filets on baking sheet and sprinkle with onion powder. Brush barbecue sauce evenly over salmon. Bake 15 to 20 minutes or until fish flakes easily with a fork.
  3. Meanwhile, in a blender, combine ranch dressing and avocado; pulse 15 seconds and set aside.
  4. Evenly divide romaine lettuce onto 2 plates. Top with corn, red onion, and cucumber. Place salmon filet on top of vegetables and drizzle with avocado ranch dressing.

I don't care for avocado's do I need to substitute something for them I'm one of those rare people who can't eat corn which I dearly love, what can I substitute?

Hi there! No need to add the avocado to the ranch dressing. Just leave it out. As for the corn, you can substitute any veggie you like, and even add hard boiled eggs. Feel free to have fun with it!

When I think of using barbeque sauce, the first things that come to my mind are meats like ribs, chicken, pork steaks, or even brisket. I never would have thought that it would also be awesome on fish! If you aren't a big salad fan, it is great just on it's own alongside some grilled or roasted veggies, or even atop a bed of seasoned long grain and wild rice!
