Updated June 18, 2021
8 Hr

These 8-Layer Pistachio Squares are going to be the highlight of your meal! This dessert recipe is filled with delicious pistachio nuts and creamy whipped topping, making it the perfect recipe to bring to your church  potluck, or simply to your next family outing. Make it ahead of time for all the flavor and no fuss.

What You'll Need

  • 2 (4-serving-size) packages instant pistachio pudding and pie filling, prepared according to package directions
  • 2 (8-ounce) containers frozen whipped topping, thawed, divided
  • 1/4 cup plus 2 tablespoons coarsely chopped pistachios, divided
  • 1 (14.4-ounce) package graham crackers

What to Do

  1. In a medium bowl, combine pudding, 1 container whipped topping, and 1/4 cup chopped pistachios. Place a single layer of graham crackers in bottom of a 9- x 13-inch baking dish. Top with 1/3 of pudding mixture.
  2. Repeat layers of graham crackers and pudding 2 more times, ending with a layer of graham crackers.
  3. Spread remaining whipped topping over top, sprinkle with remaining 2 tablespoons chopped pistachios, then cover and chill overnight, allowing graham crackers to soften. Cut into squares and serve.

tfdo 0798703 THANK YOU!

Looks yummy. Might use nilla wafers instead of grahams. FYI this should hold up well in a cooler for a couple hours easy.

HOw long will this recipe hold up when I have to take it to a luncheon (in a cooler)? We usually meet by 12 P.M. and have dessert at about 1-130.

Hi there! So, since this is an icebox cake, if you just put it in a cooler it won't hold up. However, the Test Kitchen recommends freezing it the night before. Then, you can take it to your luncheon in the cooler and it should thaw enough and be perfect in time for dessert! Enjoy!

You've got to try our Homemade Jelly Donut Holes for a fun and sometimes messy treat that's great all-year-round! Wonder how we get the jelly in the middle? The secret is using a drinking straw to make space for that oh-so-sweet jelly that fills the center! Top these with powdered or cinnamon sugar, and let the family get their fingers a little sticky!
