Peach Marmalade

You'll get a real kick out of the taste of this fruity spread. Oh, don't worry about the alcohol in the bourbon, it cooks off, leaving a rich, smooth accent in the marmalade.
What You'll Need
- 2 (20-ounce) packages frozen peaches, thawed
- 2 cups sugar
- 1 cup bourbon (see Note)
What to Do
- In a large saucepan, bring all the ingredients to a boil over medium-high heat, stirring constantly.
- Reduce the heat to medium-low and simmer for 30 to 40 minutes, or until the peaches have broken down and the syrup has thickened to form the marmalade, stirring occasionally. Remove from the heat and allow to cool completely.
- Store in an airtight container and chill for at least 4 hours before serving.
- Makes about 4 cups.
Notes
Even though the alcohol in the bourbon cooks off, if you'd prefer, you can substitute water for the bourbon.
