How to Make Ganache 1. Place chocolate in bowl. Place one cup of chocolate chips (or chopped chocolate) into a small bowl. 2. Heat heavy cream. In a sauce pan, bring one cup of heavy cream to a low simmer (not boiling) while stirring constantly. 3. Stir cream into chocolate. Slowly pour the heated cream over chocolate and stir. The hot cream will melt the chocolate. Continue stirring until all chocolate is completely melted. (Optional) Stir in a touch of flavoring. If you want to make a flavored ganache, simply add a touch (about a teaspoon) of your favorite flavoring and stir! 4. Let mixture cool. Leave mixture on counter, un-covered for 15-20 minutes, or until ganache begins to thicken slightly. 5. Immediately use to coat dessert. Pour the thickened ganache over cakes, cupcakes, pastries, whatever! Tip: place dessert on a wire rack so excess ganache falls to the bottom and does not pool around edges. 6. Refrigerate to set. Place coated dessert in fridge for about 15 minutes for the ganache to firm up. Serve and Enjoy! Tip: If you choose to use this as a filling instead of a as topping for your cake, just refrigerate it until it has thickened to the desired consistency.
