Microwave Mini Meat Loaves

Don't let these babies fool you. They may be smaller than the average meat loaf, but they're bigger on flavor! Try 'em tonight!

What You'll Need

  • 1 pound ground beef
  • 1/2 cup stuffing mix
  • 1 small onion, chopped
  • 1 egg
  • 1 (10-3/4 ounces) condensed tomato soup, divided
  • 1/4 teaspoon salt

What to Do

  1. In a large bowl, combine the ground beef, stuffing mix, onion, egg, 1/2 soup, and the salt; mix well.
  2. Shape the beef mixture into 4 mini loaves. Place the loaves in a microwave-safe 8-inch square baking dish. Pour the remaining soup over the loaves.
  3. Microwave at 80% power for 10 minutes, or until no pink remains in the beef. Serve topped with the sauce from the baking dish.


Served up with potatoes or rice and healthy greens, we've got a hearty meal ready in no time.
