A clafoutis is a French dessert that was introduced to many Americans through Julia Child, who included it in her famous book, "Mastering the Art of French Cooking." Our version of Cherry Clafoutis is a little different from hers, but it's absolutely delicious. It's sort of like a Dutch pancake with a whole lot of cherry goodness going on!
What You'll Need
- Cooking spray
- 1/2 cup all-purpose flour
- 2/3 cup granulated sugar
- 1/4 teaspoon salt
- 3 eggs
- 1 1/4 cups milk
- 2 teaspoons vanilla extract
- 1 teaspoon lemon juice
- 3 cups frozen cherries, thawed
- Confectioners' sugar for sprinkling
What to Do
- Preheat oven to 350 degrees F. Coat a 2-quart baking dish (see Note), with cooking spray.
- In a large bowl, combine flour, granulated sugar, and salt; make a well. Add eggs, milk, vanilla, and lemon juice. With an electric mixer, blend until batter is smooth. Pour batter into baking dish and top with cherries.
- Bake 45 to 50 minutes or until golden brown and center is set.
- Sprinkle with confectioners' sugar, cut into wedges, and serve hot.
Clafoutis is best when baked in a wide shallow dish rather than a deep dish.
