No-Cook Oatmeal Pudding

Never skip breakfast again with this easy make-ahead No Cook Oatmeal Pudding. Give it a try, and we're betting that you'll think it tastes so good, you might even make it for a snack or dessert.
What You'll Need
- 1 cup old-fashioned rolled oats (NOT quick cooking)
- 1/2 cup milk
- 1/2 cup vanilla Greek yogurt
- 2 tablespoons light brown sugar
- Pinch cinnamon
- Pinch salt
- 1/2 cup assorted fresh fruit
What to Do
- In a medium bowl, mix together all ingredients except the fruit. Cover and refrigerate overnight.
- When ready to serve, stir the oatmeal, then top with fruit.

I just found this recipe. I do not like Greek yogurt; could you use regular yogurt? Chocolate yogurt would be good. thanks

I'm assuming this would work even if I doubled the recipe to get two mornings for both my husband and me???? Or has that even been tested? I'm sure it's better to just make it up fresh the night before but I thought I'd ask to get your opinion.

I made this last night for a quick breakfast this morning. Very good! I didn't have Greek yogurt on hand, so I used regular vanilla flavored yogurt and omitted the brown sugar since there's so much sugar already in regular yogurt. Next time I will try the Greek yogurt and see how much difference in flavor there is. I'm a nursing student so quick--and healthy--breakfasts are a necessity. Thanks for a great recipe!

You do want to use regular oats NOT quick oats. Very good as a healthy snack!

This is delicious! I used plain Greek yogurt since I did not have the vanilla grk yogurt on hand. Also, I substituted agave nectar for the brown sugar. It was wonderful!

The texture of pudding is similar to Greek yogurt, so it may work. However, we have not tried this in our Test Kitchen, so we can not guarantee the results. Thank you!

Which oats do you use, Quick Oas or Regular oats? There is a difference when cooking just do not know about using uncooked Oats. The idea soundl good. Mo. Mom.
