Bacon and Egg Macaroni Salad

We have given popular macaroni salad a homemade makeover by adding the smoky flavor of bacon and the heartiness of chopped eggs. Team our Bacon and Egg Macaroni Salad with any of your picnic or cookout favorites and get ready for raves.
What You'll Need:
- 1 pound elbow macaroni
- 8 hard-boiled eggs, chopped
- 1/2 pound bacon, cooked and crumbled
- 1 cup chopped celery
- 1/2 cup finely chopped red onion
- 2 cups mayonnaise
- 1 teaspoon salt
- 3/4 teaspoon black pepper
What To Do:
- In a large pot of boiling water, cook macaroni over high heat 7 to 9 minutes, or just until tender. Drain, rinse, and let cool.
- Place macaroni in a large bowl, add remaining ingredients, and mix well. Cover and refrigerate at least 1 hour before serving.
Notes
- You may substitute turkey bacon for regular bacon.

At first I thought this dish was a little strange since it combined breakfast items with a lunch / dinner side dish. I tried it and ended up loving it! The rich and savory flavors of the bacon and eggs really kicks a regular humdrum thing up a big notch! I might try using up some of my extra green onions in this salad for an extra little pop of green!

I like to take this a step further and add a bit of mustard to make it Bacon, Deviled Egg, Macaroni salad. It's so good!

I have tried cooking and peeling hard boiled eggs with this technique (and every other suggestion I could find!) without success. I finally found my answer Cook them in the pressure cooker! You can purchase a safe, modern electric one relatively cheap if you shop around. They peel like a dream! I'd buy a PC for this if for nothing else, but I use it a lot. I can't wait to try this recipe! Maybe tonight.

How long do you cook them in your pressure cooker? I didn't know you could do that. I would be afraid the eggs would explode?

Wondering why the majority of the recipes with pasta tell you to rinse it after cooking. I always thought that was a no no. Mr Food help please???

Great question! The reason you rinse after cooking is typically to remove the excess starch so the pasta doesn't get sticky. However, there are some recipes that tell you not to rinse the pasta because the extra starch will help with that particular sauce. A good rule of thumb is to follow directions for each recipe.

You always rinse pasta with cold water when using it for a cold salad. Rinsing it stops the cooking process and helps it cool off quickly.

I always add a touch of dry mustard and some sweet relish to give it a slight tangy flavor. If you want to add a little splash of color, top with a diced tomato :)

This is a good basic reipe what it needs is not BEANS this is a macaroni salad recipe I add about 1/2 cup ranch salad dressing and about 1/2 - 1 teaspoon Splenda ( can use sugar we r trying to cut down on our sugar again) cubed cucumbers radishes ,tomatoes added make a colorful flavorful salad and u get some veggies & bulk in!

I made this Bacon and Egg Macaroni Salad with our Easter dinner and my husband and I both enjoyed it. I used turkey bacon to cut back on the saturated fat and cholesterol. I will be making this through the summer months when we have our summer salads and cold fried chicken.

You may be used to your macaroni salad and most of us use relish in our salads. I noticed a difference in the taste myself, but it helps to let it set in the refrigerator to allow the flavors to combine together.

Well, this is embarassing!! I thought I put that ingredient in the comment BUT guess not!!! Anyway, the missing addition was a can of dark red kidney beans. Sorry for the mess-up. You might also want to try some coarsely minced "Ancient Sweet Red Pepper" instead of the beans.

I watched the "how to boil eggs" segment today. I do the same thing, however I put the ice cubes in the pan with the eggs after draining them and the shake the pan quickly and the shells will crack and are then very easy to peel off.

This is an excellent blend of flavors and so easy to make. I've always added 1 can, drained & rinsed to my macaroni salad so I did the same to this one the second time around -- even more added flavor as well as color.
