Five a Day Gelatin

It's really important these days to eat 5 portions of fruits and veggies a day. This wouldn't count as a whole day's worth, but if you serve it topped with fresh fruit you'll be on your way...

What You'll Need

  • 2 (4 serving each) packages strawberry-flavored gelatin
  • 1 (15 ounce) jar applesauce
  • 1 (6 ounce) can frozen orange juice concentrate
  • 1 (12 ounce) can lemon-lime soda (1½ cups)
  • 2 bananas, peeled and sliced ¼-inch thick

What to Do

  1. In a medium-sized saucepan, dissolve gelatin in applesauce over low heat, about 2 to 3 minutes. Remove from heat and stir in remaining ingredients. Pour into a 2-quart bowl or gelatin mold. Refrigerate and allow to set at least 3 hours.
     
  2. When ready to serve, dip mold in hot water, just covering sides, 10 seconds and invert over a serving plate that is larger than mold. Gently shake dessert loose from mold.

Notes

This is a great addition to any buffet, and you can really have fun garnishing it with different fresh fruit each time you make it.
