Creamy Chicken 'n' Dumplings

Chicken 'n' Dumplings in under 30 minutes? With our secret, time-saving method, this recipe is almost too good to be true!
What You'll Need
- 1 tablespoon canola oil
- 1/2 cup frozen chopped onions
- 1 1/2 cups thinly sliced carrots
- 2 (10-3/4-ounce) cans cream of chicken soup
- 3 1/2 cups water
- 4 cups chopped cooked chicken
- 2 cups biscuit baking mix
- 3/4 cup milk
- Freshly ground black pepper
What to Do
- Heat oil in Dutch oven over medium heat. Add onions and carrots; cover and cook 5 minutes or until tender, stirring often.
- Stir soup, water, and chicken into vegetable mixture. Bring mixture to boil.
- Meanwhile, combine baking mix and milk in medium bowl.
- Reduce heat to low; drop dough in 12 mounds onto simmering chicken mixture. Cover and simmer 10 addtional minutes or until toothpick inserted in center of dumplings comes out clean. Ladle mixture evenly into pasta or soup bowls; sprinkle with pepper. Serve immediately.
Notes
No need to simmer this pot of chicken 'n' dumplings all day. Use a rotisserie chicken to save time as well as for convenience. For 4 cups of chopped cooked chicken, you'll need 1-1/2 to 2 chickens. And biscuit baking mix provides an easy shortcut to hand-rolled dumplings. This is a dish that would have made Mama proud!

A retired army cook once made Chicken N Dumplings for my family and that meal was the best ever, but this meal was surprisingly good, fast, and easy since my husband made the dumplings while I assembled everything else. I encouraged him to use LOTS of flour so that the gravy would be thick. I used Knorr concentrated chicken stock so I cut the poultry seasoning in half. I added a small can of peas and some sliced mushrooms. I had leftover fried chicken that I peeled off the crust & diced the meat. This meal was so good that as I waited for the leftover to cool before storing in the frig, I kept sneaking back for another bite! It was even good when it wasn't hot.

I have been making my chicken and dumplings like this for years. It is simple yet tasty. Sometimes I will substitute cream of celery soup and omit the carrots, but either way tastes yummy!

This is a terrific basic recipe! I made it more 'cost efficient' by cooking my own chicken parts, since the rotisserie chicken is getting to be extremely expensive lately. (Just bring the chicken parts to a boil, and cook them on a rolling boil for about 20 min.). I also added 3 stalks of celery which I cup up into 1 1/2 inch pieces. I used the lighter version of Cream of Chicken Soup. The dumplings were very easy to make, but you can make this even easier on yourself by using "Pillsbury Grands Buttermilk Biscuits". Just cut them in half and drop them on top until they're done (covered). When the biscuits are done, ladle everything into a bowl. Sprinkle with a bit of coarsly ground black pepper and some finely chopped fresh Italian parsley. ENJOY! You really gotta. try this!

I started Chicken & Dumplings from Biscuit mix... Roll the chicken in the mix, brown on all sides, pour off grease and pour in Cream of Mushroom soup, use biscuit mix and & milk for the dumplins. I like both recipes... depends on the time U have>>>

I make it a little bit easier and faster by tearing up canned biscuits instead of the biscuit baking mix and for the same price of whole chickens, I use bags of frozen chicken breasts or chicken tenders. Two bags per pot of chicken and dumplins

I used to make homemade chicken and dumplings (and noodles) when my children were young. Now I can't spend all day in the kitchen, on my feet, like I used to. I am anxious to try this quick method and see if it is as good. I always copy and paste my recipes (picture included if there is one) to Microsoft Office. I make all the edits I want, save it to my computer and copy all of my recipes in the same format. I put them in a protective sleeve and add to my own recipe book with a binder. That way all my recipes have the same font, caps and spacing. I love it and I get great recipes at my fingertips whenever I am ready to cook. Will make a great hand me done for my kids one day.

I, too, have a binder for my recipes from the Internet and I like your idea of passing it down to the kids. However, hope I get to add many more before it goes to kids.

You can print the recipe w/o the ad by going to file and selecting preview of what page(s) you would like to print. Select the page you want to print. Avoiding the extra pages of ads etc to print. I use this way of printing my recipes to save on ink etc. Hope this is helpful. Plus, the recipe is great. I do use the old method of making the dumplings from scratch. A comfort food is always welcomed. Thank You..

Also, in your print command, click on Preferences, then click on two-sided printing and you save paper too. I do this all the time - and you save space in your recipe binder.

Love the recipe for Creamy Chicken n Dumplings. BUT-- I do not like the Ad that has to be printed before I can print the recipe. Printing a whole page ad is a waste of paper and ink. Is there a way to only print the recipe and not print the Ad?

Turn on your printer thne go to only the part of recipe you want to print Without the ads right click and highlight only that area then go to selection on printer box click on that and your recipe will come out without the annoying ads Also I use just 3 baby carrots diced, 2 stalks celery and 1small fresh onion sauteed in about 3 Tablespoons butter gives the recipe much more flaovr I also use Biscuits for the dumplings, quicker & easier and tastes just as good
