Zucchini and Fresh Tomato Sauce

"Summer in a saucepan" because of all the fresh veggies - and the best part is that you can enjoy it all year 'round!

What You'll Need

  • 3 tablespoons vegetable oil
  • 3 garlic cloves, finely chopped
  • 1 onion coarsely chopped
  • 3 tomatoes, seeded and coarsely chopped
  • 3 zucchini, sliced into 1/4" rounds
  • 2 teaspoons salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil

What to Do

  1. In a large saucepan, heat oil; saute garlic and onion until onion becomes transparent.
     
  2. Add tomatoes and continue cooking until tomatoes soften, about 5 to 10 minutes.
     
  3. Add remaining ingredients and simmer over a low heat an additional 15 to 20 minutes, stirring occasionally.
     

Notes

Makes about 6 cups.

This is good, but add some yellow squash,rice,okra and ltalian sausage. What a dish!

This sounds so good I may try adding a little Italian suasage at the end, and toss with pasta,adding a bit of grated parm on top. YUM!
