Sunday Night Noodles

What do you make on a Sunday Night when you want to wrap up the weekend by cooking up a meal that'll leave 'em full and ready to start the week? We've got an idea! It's Sunday Night Noodles! The whole family will love this easy, creamy dinner recipe.
What You'll Need
- 1 (16-ounce) package medium egg noodles
- 1 (10-ounce) package frozen chopped spinach, thawed and drained
- 2 cups cottage cheese
- 1/2 cup grated Parmesan cheese
- 1 (16-ounce) container sour cream
- 1 1/2 teaspoons salt
- 1/2 teaspoon black pepper
- 1 teaspoon Italian seasoning
- 1 tablespoon butter, melted
- 1/4 cup dry bread crumbs
What to Do
- Preheat oven to 350 degrees F. Coat a 9- x 13-inch baking dish with cooking spray.
- In a large pot of boiling salted water, cook noodles to desired doneness; drain.
- In a large bowl, mix spinach, cottage cheese, Parmesan cheese, sour cream, salt, pepper, and Italian seasoning. Stir in noodles, then spoon mixture into prepared baking dish. In a small bowl, combine melted butter and bread crumbs. Sprinkle over noodles.
- Cover and bake 45 minutes, or until heated through. Serve immediately.
Note
-
Make this an all-in-one meal by adding some cooked chicken or diced ham. Yum!

This is yummy and strikes me as a much easier way to get the taste of spinach lasagna without all the work. I've made something similar in the past using fettuchini, and included a bit of ground beef with the spinach mixture. When I make this again, I'd like to try it with the addition of some bacon. It also makes for a great side dish.

Just made these for dinner tonight, and they're good. I did cut down on the noodles to twelve ounces, and used ricotta cheese. From reading other comments I was afraid they'd be dry, so I added maybe one fourth to one third cup of half and half. Also put in some garlic powder - about one teaspoon - plus some grated CHEDDAR cheese (didn't have any mozzarella),, and a little butter, maybe two tablespoons. Next time, I'd leave out the Italian seasoning. And - I just added a little salt......you can add more, but you can't take it out, and I'm not supposed to have much salt anyway. All in all, this was good and I'd like to tweak it little more when I make it again.

Would not recommend this version of the recipe...very disappointing. Was not creamy at all and very little flavor..."not so good". Seemed like way too many noodles.

Forget some of the things in this recipe--it's a weird combination. Combine the egg noodles, chopped bell peppers, 1/2 tsp seasoned salt instead of 1 1/2 tsp salt (butter also has sodium, so the amount of salt should be reduced), shredded monterey jack and mozzarella instead of Parmesan and cottage cheese, 1 tsp black pepper, 1/4 cp dry bread crumbs, and keep the melted butter for a good liquid.

I have made a variation of this recipe for years that turns out tastier and richer. Instead of heavy egg noodles use Angel Hair pasta. Forget the cottage cheese and use ricotta, it costs just a few pennies more and makes a HUGE difference. I also add some shredded mozzarella cheese for richness, (at least one cup). I like the added Italian seasoning but you can also use fresh basil and/or thyme for a lighter taste. When using cottage cheese or ricotta and spinach, more salt is necessary. I always use Lawry's garlic salt (coarse ground with parsley) with this sort of dish, add to taste. If you and your family like fresh garlic, add as much as you want to make them happy. One last but very important note, frozen spinach is great, but remember to squeeze every last drop of moisture out of it! Give these variations a try and you will have a much tastier dish!

I didn't like this at all. It has just about no flavor. I even tried putting some sauted peppers, mushrooms and onions in it to no avail. Could have used some chicken stock or gravy or a lot less spinach. I can honestly say this is the only time I've been let down by a Mr. Food recipe!

Good basic recipe reminds me of the dairy casserole you can brown some ground beef onions add some mushrooms if u like & salt & pepper to taste ... put half of noodle mix in dish then meat mixture then remaining noodle mix top with buttered crumbs & Bake Really good & hearty

When I made it there were too many noodles for the amount of sauce it made. Next time I will reduce the noodles by 25 to 50%. Otherwise it's a wonderful recipe.

Whenever I try a recipe I always add my own spin. I did without the sour cream because I didn't have any. I added onions, peppers and some celery. In addition, I included hot sausage that I broiled slightly. Honestly, although this "casserole" does not look the tastiest it is absolutely delicious. Feel free to add to this recipe to suit your tastes.

Sounds great to me. Adds more protein to make this a hearty main dish. It sounds like this recipe is very easy to vary with your own favorites. To answer the other questions about ricotta cheese and Greek yogurt. I interchange ricotta with cottage cheese and sour cream with plain Greek yogurt all the time with excellent results.

I would try plain Greek yogurt as a substitution. You could also use plain cream cheese thinned down a bit but it would add to the fat content of the meal. Hope this helps!!
