Awesome Blueberry Pie

If you've been searching your whole life for an easy blueberry pie recipe that tastes just like the one grandma used to have sitting on her counter, then it's a good thing you found our Awesome Blueberry Pie! This simple pie makes a beautiful addition to any spread, too! But who wants to just look at it? Dig in!
What You'll Need
- 1 (9-inch) frozen ready-to-bake pie shell, thawed
- 1 (4-serving size) package lemon gelatin
- 1/2 cup sugar
- 1/4 cup cornstarch
- 3/4 cup ginger ale
- 3 pints fresh blueberries, washed
What to Do

Bake pie shell according to package directions; set aside to cool.

In a medium saucepan over medium heat, combine remaining ingredients, except 2 pints blueberries. Cook 5 to 7 minutes, or until gelatin mix has dissolved and blueberries have popped and colored mixture blue, stirring frequently. Remove from heat and let cool about 5 minutes.

Stir in remaining 2 pints blueberries then spoon into baked pie shell.

Chill at least 4 hours, or until set. Serve, or cover and keep chilled until ready to serve.
Notes
- Before serving, top each slice with a dollop of fresh whipped cream and a sprig of fresh mint.

I have made this pie using both fresh and frozen blueberries, and I found that the frozen can be larger and have a greater moisture content than the fresh, and can result in a soggy crust. I would recommend thawing and draining the frozen, (don't throw that stuff out - it's a treat for the chef!) and adjusting liquids accordingly. A little less ginger ale, or even a little more cornstarch to thicken it.

Blueberries are my favorite fruit. I could eat them all the time out of the carton. Also, I think blueberry desserts have the best taste. I just don't know if I would like the lemon gelatin. Maybe it isn't as strong as I'm thinking, so I may try it and if I don't like the taste I could try another flavored gelatin like some of the others suggested. And some where questioning the amount of blueberries, and the recipe says add all other ingredients EXCEPT 2 pints. So you would use the one pint and save the other two.

Excellent! Thank you to oldgoat6 for the suggestion to use the "My Pie Crust" recipe -- it has a cookie flavor, and is healthier than a traditional pie crust. Also, thank you to memaw1938 for telling us she used Berry able Jello -- because that's the Jello I had on hand. I will make this recipe again.

What a great recipe! Being diabetic, I would use the sugar-free jello and gingerale and perhaps half sugar/half splenda. I made a strawberry pie a few weeks ago using the same sugar-free method with the jello, etc and all my non-diabetic friends loved it. I think any fresh fruit and berries would work very well.

We haven't tried this substituting the lemon gelatin with unflavored gelatin in this recipe, but we think it might work. If you do give it a try, it would be about 1 package of unflavored gelatin with about a 1/4-1/2 cup of sugar. We'd love to hear how it turns out!

Let me begin by saying that I really don't like blueberries. However I live in the blueberry capitol of South Jersey and everyone I know loves them. Made this pie for a dinner I attended and it got such rave reviews I've had to make it several times more for friends and family. Great recipe and so very easy. Thanks Mr. Food.

Why not use Mr. Food's recipe for "My own pie crust" instead of a frozen pie shell? This recipe works well with any single pie crust! And Thank You for all the great recipe's that you share!!!

You can substitute with 2 TBL of flour or 4 tsps of quick cooking tapioca for 1 TBL of cornstarch.

This is a very good and quick way to make a blueberry pie. You can also use the same principle with other types of fruit -- peach jello with peaches, strawberry jello with strawberries, etc. You are limited by only your imagination.

This pie is top-notch. Everyone loves that the blueberries are whole and 'crisp.' A nice change from mushed-up berries in other pies. Also, it's not too sweet; it's just right with lots of blueberry flavor. I made it with a graham cracker crust and did the cooking in the microwave.

The recipe caught me off guard also. I thought the recipe said to put 2 pints in the saucepan and then stir in 2 pints later. I think it would be less confusing if the recipe said to put one pint in the saucepan, saving 2 pints to add later.

If I am wrong I will apologize, but recipe is wrong. 3 pts blueberries in ingredients part of recipe. Directions say cook 2 pts of blueberries then stir in 2 pts of blueberries. I thought 2 plus 2 is 4????
