Oatmeal Cookie Pie

Our easy-as-pie Oatmeal Cookie Pie has all the tastes of one of our all-American favorite cookies. This change of pace version will have everyone taking notice!
What You'll Need
- 1 rolled refrigerated pie crust (from a 15-ounce package)
- 3 eggs
- 1 cup light corn syrup
- 1/2 cup packed brown sugar
- 3 tablespoons melted butter
- 1 cup quick cooking oats
- 1 tablespoon all-purpose flour
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon salt
- 3/4 cup raisins
What to Do
- Preheat oven to 325 degrees F. Unfold pie crust and place in a 9-inch deep dish pie plate.
- In a large bowl, beat together eggs, corn syrup, sugar and butter.
- Add remaining ingredients and mix well. Pour into crust. Place on baking sheet.
- Bake for 55 to 60 minutes or until top is golden brown and filling is set in center. Cool.
Notes
Serve with whipped cream or ice cream.

Quick and tasty- substituted mini choc. chips and coconut for the raisins, BIG hit at family reunion. I am going to try using frozen crust next time, and just make sure is thawed first.

Unfortunately, you cannot sub brown sugar or white sugar for the corn syrup in this recipe. You need the corn syrup to be mixed with the eggs, since this is what holds everything together.

Awesome pie! Mine took about 10 mins longer to cook than stated, but no problem. Served it with a scoop of butter pecan ice cream. Will be making this often!

I made this pie this afternoon for a church dinner and it was easy to make and had a great texture when cooked. It was gone ina matter of minutes. It really did taste like an oatmeal raisin cookie. Delicious. I didn't think about chocolate chips. I will try that next time. Great idea. Thank you for a grear recipe.

This pie was easy to throw together and delicious. I did substitute chocolate chips for the raisins, as I am not a raisin fan. My family devoured the pie. Excellent. Will make again.
