Anytime Fried Rice

You don't have to be serving up a complete Chinese dinner to serve fried rice. And with no egg and minimal oil, Anytime Fried Rice is a 1-2-3 throw-together that's quick and ready to go in no time at all. This fried rice without egg is a dinner winner!
What You'll Need
- 2 tablespoons vegetable oil
- 3 cups cold cooked white rice, rinsed
- 1 (10-ounce) package frozen peas, thawed
- 3 scallions, sliced
- 1/3 cup light soy sauce
- 1/4 cup chicken broth
- 1/4 teaspoon black pepper
What to Do
- In a large skillet over medium-high heat, heat oil. Add rice and stir-fry 10 minutes.
- Add peas and scallions and continue to stir-fry 1 minute. Add remaining ingredients; mix well.
- Reduce heat to medium-low and cook 2 to 3 minutes, or until thoroughly mixed and heated through.
Notes
- Using moist, cold rice helps to give your Anytime Fried Rice that authentic crisp fried rice texture and flavor. This is a great way to get rid of leftover rice!
- This is a recipe for fried rice without egg, but if you prefer you can always add a scrambled egg to the finished dish (as pictured).

Why does my white rice always clump together ? Never comes out right for me ? Very frustrating . Even tried a rice cooker , , but that burned ou !

Hi! The first step to prevent rice from clumping is to rinse uncooked rice. Place rice in a bowl of cold water and stir to agitate rice. This will remove starch on rice which causes clumping. Then strain the rice through a colander. Repeat process until water is no longer cloudy. The second step is to make sure to let rice rest. Cook the rice with a tight fitting lid. Remove from heat and uncover, place a paper towel or kitchen towel over pan; then cover tightly with lid. Let rice stand 15 minutes then fluff with fork. This helps any condensation from dripping into rice and making sticky. Hope that helps!

A good substitute for my favorite takeout fried rice. Not quite a good as my local fave, but darn close. And much more economical. Like my local restaurant does, I use about 8 oz of frozen baby peas (1/2 of a 16 ounce bag - which I always have in the freezer) 8 oz of fresh bean sprouts. They add a wonderful crunch to the final product. I also scramble 2 eggs before I start with the rice in the skillet. Remove when cooked through set aside. Stir the eggs back in just a minute or 2 before service to keep the eggs tender. If you want to spice it up, measure 1/4 cup of soy sauce finish the 1/3 cup measure with some sirracha. I espeically enjoy that with the egg added version.

Made this for dinner added 1 cup of cooked celery 1/2 cup of sliced red sweet pepper. Will make this again using different veggies. Yumm!

I have tried every thing... still my fried rice is terrible. It's the rice. I have tried different brands. Day old, 2 days old. Every thing else I make is dead on good. But not my fried rice, HELP PLEASE!!!! IT'S NOT the recipe.. it's me!!!

Hello! We're sorry to hear that you've had some trouble with making the fried rice. It's hard to say exactly what may have gone wrong without knowing what you've tried, but we recommend using long grain rice. Cook the rice first, then refrigerate until cold. We hope this helps!

Make sure you're not using any of the par-boiled, pre-cooked, quick-cooking converted rice products. Use good old raw long grain rice that takes 15 or 20 minutes to cook. Then chill it. Good luck!

Always rinse the rice until the water runs almost clear. This gets rid of the excess starch. That might solve your problem.

Jasmine long-grain rice is a must. The worst thing is to have fried rice clumped together, not very appealing to the eyes. :-(

I use BASMATI rice and have never had a problem. I always rinse it before cooking to get rid of the excess starch.

This was a quick and tasty fried rice. I prefer it over the Chinese restaurant version,especially since I know exactly what's in it! I didn't have enough soy sauce and ended up doing half soy sauce, half teriyaki sauce. I fried up an egg to add to it, and used a bag of frozen mixed vegetables. My husband asked when I was going to make it again, so it ranks high for me.

the fried rice would tasted so much better if you add cooked left over pork or chicken or shrimp and add some pieces of scrambled egg believe me the taste is so much better. and you will love it. it's great as a meal or a side dish

Ok, this sounds good ... but I never wash cooked rice and I add scrambled egg. Most importantly, to make it a full meal, I add leftover chicken or steak cut into cubes. YUM

Excellent, I also added the eggs like they do in restaurants kinda fried then added other ingredients. I used frozen carrots instead of peas and I added shrimp. I boiled the gulf shrimp just a bit first. This was a whole meal and we loved it

I like to use Garlic Salt instead of powder, I also add 3 eggs to the rice at the same time as I add Soy Sauce! It is delicious!
