Honey Mustard Potato Salad

Our viewers are always writing in and asking for new ways to serve potato salad. Well, we got this recipe for Honey Mustard Potato Salad from Idaho and we think it's one of our favorite change-of-pace potato salad recipes. The bacon and honey mustard blend really add zing and flavor!
What You'll Need
- 2 pounds Idaho potatoes with skin on, cut into 1-1/2-inch chunks
- 1 cup mayonnaise
- 1/8 cup honey
- 1 tablespoon prepared mustard
- 1/4 teaspoon salt
- 1/4 cup sliced scallions (1 to 2 scallions)
- 3 slices cooked bacon, crumbled
What to Do

In a large pot of boiling, salted water, cook potatoes 15 to 20 minutes, or until fork tender. Place in a large bowl and set aside.

In a small bowl, combine mayonnaise, honey, mustard, and salt; mix well. Gently toss dressing with potatoes until well coated. Add scallions and bacon and toss gently; chill until ready to serve.
Notes
We're thinking that this goes great with so many things! For a start -- burgers, anyone??

That's why they're different Kama so many different recipes for potato salad. You have to find the one that you like best. Some people like mustard in their potato salad and some people don't. Also with eggs or no eggs. That seems to be the big divide, mustard and eggs.

My husband and I love potato salad, but we didn't care for this one. We thought it was rather bland in taste. Perhaps salad dressing would of gave this salad more zing than the mayonnaise. I did add a 1/2 tsp of salt, and a 1/4 tsp of pepper, but still ended up adding more at the table, each time I served it. I didn't add scallions to the salad. I substituted red onions for the scallions, and added a bit more. I think the only thing that makes this salad taste good, is the bacon, and I added 5 slices, but think it could use more, perhaps 6 to 7 slices. The second time I served this salad, I added some choped hamburger dill pickles slices, which I blotted with paper toweling. It gave the salad some crunch, plus it improved the taste of the salad somewhat. One more thing, my husband didn't care for the size of the potatoes, he said 1-1/2-inches was too large for potato salad. Hubby also said, not to make this salad again. I'm sorry I wasn't able to give this recipe a good review, but I'm glad to see others enjoyed it.

Husband loved it because it didn't have as he said "a bunch of salad in it and bacon makes everything".Use mayo mustard honey sauce for chicken tenders also.
