Marshmallow Sweet Potato Bake

Sweet potato casseroles with marshmallows on top are a classic Thanksgiving side dish, and our recipe for Marshmallow Sweet Potato Bake is a shortcut way of making it. We bake canned sweet potatoes mixed with a few ingredients, before topping 'em off with marshmallows to make this one of your best sweet potato recipes.

What You'll Need:
  • 1/4 cup butter, melted
  • 2 (29-ounce) cans sweet potatoes, drained and mashed
  • 3/4 cup sugar
  • 2 eggs
  • 1/2 cup milk
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 1 cup mini marshmallows
What To Do:
  1. Preheat oven to 350 degrees F. Coat a 3-quart casserole dish with cooking spray.
     
  2. In a large bowl, combine all ingredients except marshmallows; mix well. Spoon into casserole dish.
     
  3. Bake 40 minutes. Sprinkle evenly with marshmallows and continue baking for an additional 10 minutes, or until marshmallows are golden.

I lost my usual recipe at Thanksgiving so I made this one everyone said it was the best that I've ever made! So I'm making it again for Christmas.

Can you do the same thing with fresh sweet potatoes after you boil them?

Yes, you absolutely can!

Is this a dish which could be made say the day before and reheated? If so, would I follow this recipe right to the end, then just reheat next day, or would I wait to add the marshmellows and complete the recipe from that point the day of serving? Thank you!

Hello! We do not recommend baking the dish the day before and reheating the next day, as the dish may taste dry the next day. However, you can combine all your ingredients (except marshmallows) the day before and refrigerate it overnight, so all you have to do is add the marshmallows and bake the next day. Enjoy!

Excellent Thanksgiving & Christmas side dish everyone loves it I sometimes use brown sugar and even a little pancakes syrup instead of white sugar sometimes sprinkle with a little cinnamon have heard of sprinkling with red-hot cinnamon candies then a layer of marshmallows but haven't tried that one yet

Add some crushed pineapple sometimes....makes it a little different...and good.

This is the receipe my mother used and I added crush pecans with the mini marshmallows and everyone has ask for this recipe
