Sweet Potato Casserole

There couldn't be an easier way to make an elegant sweet potato side dish. Canned sweet potatoes are a huge time-saver, and when they're mixed and baked with a few ingredients and topped with pecans, it makes this Sweet Potato Casserole hard to resist. We love having an easy sweet potato casserole recipe on hand, especially during the holiday season, so you'll sure be thankful you saved this one 'cause it's just so simple!
What You'll Need
- 1 cup chopped pecans
- 1 cup packed light brown sugar
- 1/3 cup all-purpose flour
- 1/2 cup (1 stick) butter, softened, divided
- 1/4 cup sweetened flaked coconut (optional)
- 2 (29-ounce) cans sweet potatoes, drained and mashed
- 3/4 cup granulated sugar
- 2 eggs
- 1/2 cup milk
- 1 teaspoon vanilla extract
- 1/2 teaspoon salt
What to Do

Preheat oven to 350 degrees F. Coat a 3-quart casserole dish with cooking spray.

In a medium bowl, combine pecans, brown sugar, flour, 1/4 cup butter, and the coconut, if desired; mix until crumbly, then set aside.

In a large bowl, combine remaining ingredients, including remaining butter; mix well. Spoon into casserole dish and sprinkle evenly with pecan mixture.
- Bake 45 to 50 minutes, or until bubbly and heated through.

Hi Richard! When mixing the sweet potatoes, we recommend doing it by hand with a wooden spoon. If you would like to use an electric mixer, please be advised that it could get messy! You can try to mix the sweet potatoes with an electric mixer on low speed for one minute, or until smooth. Enjoy!

I Saw this recipe done over a month ago,and I could not find it on their website. And just now I put in the Yahoo section for a sweet potato recipe and found this Mr. Food test kitchen section. I am making this and taking it to my church for a Easter dinner to share.

I made this for a Christmas party and it was delicious! Like a person who commented previously, I used oatmeal instead of pecans for the topping. The casserole was very rich and although we ate it as a side dish, I didn't want dessert afterward because it was so sweet. It's a good recipe!

I made this and it was delicious and will make this my tradition. My family loved it and it was wonderful. I used not pecans because my daughter is allergic to them, I used oatmeal instead and it worked beautifully.

For the best flavor, bake the sweet potatoes in their skins. Once cool, scoop them out and proceed. The baking really enhances the flavor and it is super easy too.

My sister-in-law came up from Florida this past Thanksgiving and made this (minus the coconut) it was so good we ate it instead of the pies. It tasted like pecan pie without the crust. Rosie couldn't remember the measurements of ingredients, so I haven't had it since. Thank you for a wonderful recipe and wonderful memories when I make it.

athe recipe I use is very similar to this one, but I add a small can of crushed pineapple, a splash of maple syrup and about 2 tsp pumpkin pie spice. I cover the top with mini marshmallows and add a ring of chopped pecans around the outside of the dish. Even the members of my family who "hate" sweet potatoes love this

Hi, maybe someone can help clear my confusion. It states in the ingresients to not mash the sweet potatos. But. don't they wind up mashed anyway? Is it just best to wait to mash them until you add the other ingredients? Or am I wrong, do you not mash them at all? Thank you. Help apprecited.

In the list of ingredients, it mentions that the sweet potatoes should be drained and mashed. Hope this helps. :)

I got this recipe years ago out of Mr. Food magazine. I am told--i mead asked--to make this every year for holidays! I have not made it with coconut but i'm sure thats great too. I have used canned and fresh. I just wing-it with the fresh. It turns out great no matter what. my family always says: OOH it's so good!!!

Do the math: 2 29 ounce cans = 54 ounces. Divide 54 by 16 (number of ounces in a pound) and you get 3.65 pounds. (Roughly slightly over 3 1/2 pounds.)
