If you've been wanting to make homemade pickles, but have no idea where to start, then you're in luck! This recipe for Plantation Pickle Chips is easy to follow and delivers tasty results. All you need are some cucumbers, spices, and a few other ingredients to make the most perfect homemade pickles.

What You'll Need

  • 4 medium-sized cucumbers, thinly sliced (see Note)
  • 1 large onion, thinly sliced
  • 1 tablespoon salt
  • 1 cup sugar
  • 1 tablespoon white vinegar
  • 1/2 teaspoon mustard seed
  • 1/4 teaspoon turmeric (optional)
  • 1/8 teaspoon ground cloves
  • 1/8 teaspoon celery seed

What to Do

  1. In a large bowl, combine cucumbers, onion, and salt; mix well then let stand for 1 hour.
     
  2. Drain vegetables and place in a large pot. Add remaining ingredients; mix well. Cover and simmer over low heat for 5 to 6 minutes, or until cucumbers are slightly tender.
     
  3. Remove from heat and allow to cool completely. Transfer to an airtight container and chill overnight before serving.

Note

There's no need to peel the cucumbers for these homemade pickles, but you can if you want to.

I just made this recipe and it is good. I gave it only 4 stars because of a lack of information in the recipe. I did get in touch with Mr.Food test kitchen about the amount of liquid (vinegar - 1 TBLSP) and they did confirm that amount because when the sugar melts it does become liquid and the cucumbers and onions do give off liquid. The note would be helpful in the directions. Also, starting to cook on low and keeping it on low it took aboout 12-15 minutes. One very important step in the directions was missed. After saying drain the vegetables it should also say to rinse the salt off them, if you don't they will be very salty and at the end of cooking I had to add another TBLSP of vinegar since it wasn't tart enough. I will make this recipe again with the additions I made to this recipe.

Only 1 T. vinegar??? Sounds doubtful to me.

One tablespoon of vinegar doesn't sound like enough liquid to combine with the cucumbers to end up with 6 pints.
