If you like a little kick and a ton of flavor in your seafood dishes then you're gonna love our Shrimp 'n' Pasta. We take flavorful veggies and herbs, as well as some shrimp and picante sauce, and combine 'em together to create a shrimp pasta masterpiece!

What You'll Need

  • 8 ounces rigatoni or other pasta shape
  • 1/4 cup olive oil
  • 1 green bell pepper, cut into short, thin strips
  • 1 yellow bell pepper, cut into short, thin strips
  • 1 cup sliced mushrooms
  • 3 cloves garlic, minced
  • 1 tablespoon dried basil
  • 1 pound medium shrimp, peeled and deveined
  • 2 tomatoes, coarsely chopped
  • 1 cup picante sauce
  • Grated Parmesan cheese

What to Do

  1. Cook pasta according to package directions; drain and keep warm.
     
  2. Meanwhile, in a large skillet over medium-high heat, heat oil. Add peppers, mushrooms, garlic, and basil. Cook 4 to 5 minutes, or until peppers are almost tender, stirring frequently. Stir in shrimp and cook 1 to 2 minutes. Stir in tomatoes and picante sauce; reduce heat to low and simmer 5 to 7 minutes, or until warmed through, stirring frequently.
     
  3. Transfer to a large bowl, then add cooked pasta; mix well. Sprinkle with cheese and serve immediately.

Notes

  • You can serve this with additional picante sauce, if desired.
     
  • This dish has it all, except of course, dessert! We thought a light and refreshing Country Fruit Stand Salad might just be the answer to topping off a delicious meal!

Is this considered a salad to be served warm? Would it be wise to serve this cold?

This is considered an entree and should be eaten warm.

This was fantastic and easy. I made it with uncooked shrimp though so shrimp would remain tender and juicy. Everyone loved it.

Why is size of shrimp always mentioned? Jumbo and others can be chopped to make medium size. Why not just say bite size?

When I put a plate of food on the table, I want it to be appetizing. Whole shrimp looks so much better than fat and skinny pieces of shrimp on a bed of colorful pasta.

I can't wait to try this!

It would be really nice if you would include whether or not a recipe can be successfully frozen.

This is delicious stuff. Very easy and quick. I usually have the ingredients on hand-including a bag of frozen shrimp. Didn't make any changes in the recipe!

Can this be made with uncooked peeled shrimp? Cause wondering if using already cooked shrimp, wouldn't the shrimp get kind of tough? Thank you

Maybe it's just me, but I would always use uncooked shrimp in a recipe like this. Cook a few minutes longer, that's all.

If a recipe does not say "cooked shrimp" if means (fresh or thawed, frozen) uncooked shrimp.

This type of shrimp/pasta is a go-to meal for us. I like to add fresh asparagus or broccoli, either of which can cook with the pasta for the last 3 min. or so, before tossing with the sauce. And any sauce will do - jarred marinara or alfredo is also great!

What is the difference between Picante sauce and salsa? Just wondered if you can sub one for the other?

I use salsa all the time any brand will work
