Shrimp Scampi on a Stick

What You'll Need
- 1 cup (2 sticks) butter
- 3 tablespoons olive oil
- 10 cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 1/2 pounds large shrimp, peeled and deveined, tails left on
- 2 tablespoons fresh lemon juice
- 2 tablespoons chopped fresh parsley
- 48 wooden skewers
What to Do
- In a large skillet, heat butter and oil over medium heat. Add garlic, salt and pepper and saute the garlic for 1 to 2 minutes; do not brown.
- Stir in the shrimp and cook 3 to 4 minutes, just until pink. Stir in the lemon juice and parsley; mix well.
- Place shrimp on skewers and serve immediately.
