Shrimp Scampi on a Stick

What You'll Need

  • 1 cup (2 sticks) butter
  • 3 tablespoons olive oil
  • 10 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 1/2 pounds large shrimp, peeled and deveined, tails left on
  • 2 tablespoons fresh lemon juice
  • 2 tablespoons chopped fresh parsley
  • 48 wooden skewers

What to Do

  1. In a large skillet, heat butter and oil over medium heat. Add garlic, salt and pepper and saute the garlic for 1 to 2 minutes; do not brown.
  2. Stir in the shrimp and cook 3 to 4 minutes, just until pink. Stir in the lemon juice and parsley; mix well.
  3. Place shrimp on skewers and serve immediately.
