Best Noodle Soup Ever

We're betting you'll agree that this is the Best Noodle Soup Ever. Our Asian-style chicken soup with lots of noodles swimming in the flavorful broth is sure to bowl over your soup-lovers.
What You'll Need
- 8 cups chicken broth
- 1 tablespoon light soy sauce
- 1 cup sliced fresh mushrooms
- 1 (8-ounce) can sliced water chestnuts, drained
- 1 carrot, peeled and shredded
- 1/2 pound boneless, skinless chicken breast, cut into 1/2-inch chunks
- 1/4 pound uncooked spaghetti, broken in half
- 1 cup fresh snow peas, trimmed
- 2 scallions, sliced
What to Do
-
In a soup pot over medium-high heat, combine chicken broth, soy sauce, mushrooms, water chestnuts, carrot, and chicken; bring to a boil.
- Add spaghetti and snow peas, and continue boiling 8 minutes, or until pasta is cooked, stirring occasionally. Top each serving with sliced scallions.

I love this , the only thing I do different is to cook my pasta or rice separate , and add to my bowl when serving, that way the pasta wont drink up the broth, can also use rice the same way, cooking separate , also the broth freezes very well.

I don't think it was vey asian. My husband thought it more like a chicken noodle soup. He loved it, but he loves anything with pasta. My noodles ended up soaking up a lot of the broth, so they were on the too soft in my opinion.

Depending on what particular brand you are using, sometimes chicken broth can really vary in saltiness. I recommend tasting your broth first. You may want to use a reduced sodium variety, or you could replace a cup or two of the broth with water. This is a great standby recipe that can be very versatile. Use which veggies you have on hand. I like to add a whole thai chili in mine and then I just pluck it out before serving for a little heat.

I use College Inn less salt for my soup, the less salt still has a lot of salt in it I find College Inn much better tasting so far. I save my chicken carcass and when I make chicken soup I put them in a dedicated laundry bag. Boil the soup for and hour or two covered. Take out the laundry bag and throw the bones etc. in the garbage. Now put in your carrots, celery, potatoes and cook till done. If you want you can add other cooked chicken now but do not cook it any longer. Delicious the best soup you will ever make. The more carcass you use the tastier it will be. Last soup I used 3 carcass. Freezes well also, but make sure you take out all the air from the freezer bag, and label it. You will love it...

This recipe is really good and very easy to make. Cooking the spaghetti in the broth gives the noodles extra flavor. I julienne cut the carrots instead of shredding them. Next the day I reheated leftovers and added slices of fresh jalopeno (I was craving something spicy) and it was awesome! I will definitely be making this again!!! Thanks Mr. Food!

This recipe sounds vey interesting will try it I am going to use about 1 lb pork butt cut into small cubes add some garlic powder then brown well in a little oil before adding rest of ingredients everyone always uses raw noodles pasta rice potatoes or barley when making soups it simmers in the broth and makes it taste so much better That is how soups are made! I usI am going to add a can drained bamboo shoots instead of water chesenuts i think it will go very well

Putting uncooked spaghetti together with the meat and eveything else does not sound right to me. I would cooked the spaghetti first by itself and then add them to the meat and broth when they are done for half a minute. This way the noodle or spaghetti will taste better.

You brown and cook your meat if using meat BEFORE adding any broth or uncooked spaghetti and the noodles do NOT taste better simply cooked in plain water Granny knows .. been cooking for 52 years

It is ok but for the water chestnut. Water chestnuts do not go well with noodles but then it is a personal preference, I guess.

Your chicken will cook in minutes in the broth while everything else is cooking and give the broth more flavor. Use raw.
