Chilled Shrimp Cocktail Soup

This no-cook Chilled Shrimp Cocktail Soup is an all-around refreshing cold soup. Frozen, cooked salad shrimp add exciting taste and texture to a bowl of fresh diced veggies swimming in a broth that features chilled vegetable juice.

What You'll Need

  • 3 cups vegetable juice, chilled
  • 1 (11-ounce) jar cocktail sauce
  • 1 (10-ounce) package frozen cooked salad shrimp, thawed
  • 1 tomato, diced
  • 1/2 green bell pepper, diced
  • 1/2 cucumber, diced
  • 2 scallions, thinly sliced

What to Do

  1. In a large bowl, combine all ingredients; mix well. Serve immediately, or cover and chill until ready to serve.


For added zing, mix in some hot pepper sauce or prepared white horseradish.

Add avocado, cilantro and lime juice. Use larger shrimp that you can cut in half lengthwise if needed.

Do you think this would also be good as a hot soup? Anybody?

This is a very popular dish in Mexican restaurants in California & is always served hot with acacado & cilantro. I alsoput riceor tortilla chips in it. Delicious.

I would think that if it is sever it hot it will over cooked the shrimp

you can also add chunks od Avacdo and pieces of frdsh Cilantro.

This sound good, but for the bell pepper I would use Cubanelle, Banana. Anaheim, Hatch, Ortega. Poblano or if want more spice Jalapeno,or Serrano. I would so use Tomato juice or Clamtomato. To much of a celery tasty in Veggie Juice also would add avocado just before serving
