In the fall, you've just got to have a bowl of Creamy Pumpkin Soup. This simple pumpkin soup recipe will warm you up from the inside-out. It's so good, you're going to want to lick the bowl clean!

What You'll Need

  • 1 can (29 ounces) pure pumpkin
  • 1 3/4 cups chicken broth
  • 1/2 cup water
  • 1/4 cup firmly packed light brown sugar
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon salt
  • 1/8 teaspoon black pepper
  • 2 cups half-and-half

What to Do

  1. In a large saucepan, combine all the ingredients except the half-and-half; mix well. Bring to a boil over medium heat, stirring frequently.

  2. Reduce the heat to low and stir in the half-and-half until well blended. Cover and simmer until heated through. Serve immediately.

Notes

We like to garnish each bowl with a sprinkle of cinnamon before serving. And if you want a really spectacular presentation, you can even serve the soup in individual, hollowed out, small pumpkins!
