Potato Cheese Soup

Rich-as-can-be Potato Cheese Soup is a classic restaurant favorite that we can easily simmer on our stovetop. With a stick-to-your-ribs thick and hearty potato soup like this, it's easy to ladle up a satisfying meal chock-full of comfort.
What You'll Need
- 2 tablespoons butter
- 1 celery stalk, finely diced
- 1 small onion, finely diced
- 1 3/4 cups chicken broth
- 3 large baking potatoes, peeled and diced
- 2 teaspoons white vinegar
- 3 tablespoons all-purpose flour
- 2 1/2 cups milk
- 1/4 teaspoon salt, plus additional to taste
- 1 teaspoon black pepper
- 2 cups (8 ounces) shredded Cheddar cheese
What to Do
- In a soup pot, melt butter over medium-high heat. Add celery and onion, and saute 5 to 7 minutes, or until tender.
- Add chicken broth, potatoes, and vinegar; cover and bring to a boil. Reduce heat to low and simmer 20 to 25 minutes, or until potatoes are tender.
- Add flour, milk, salt, and pepper; cook until soup is thickened and heated through, stirring constantly. Add cheese and stir until melted. Taste for salt, adding more if necessary. Serve immediately.
Notes
- Because salt levels vary depending on the type of chicken broth you use, you may want to taste for salt when you've finished cooking the soup.
- To serve this hearty soup restaurant-style, top with bacon bits, sliced scallions, and additional shredded cheese.

A far quicker and easier soup to make than the one I usually make. Being alone now, there are not the massive leftovers either. Only change I made was to add 2 chopped garlic cloves. Excellent soup. My new potato cheese soup.

Excellent recipe-very tasty and SUPER EASY! We get our milk from a farm and ended up purchasing too much a couple of weeks ago so I searched for recipes where I could use the sour milk. This soup was excellent, better than a bistro! I used 2 cans of chicken broth, extra onion and little extra butter. I used sour milk instead of regular milk. Rather than shredded cheese, I cut a block into cubes and measure 4 cups (in a glass Pyrex cup). Lots of air space in a cup of cubed cheese compared with packed shredded cheese so figured was close.

I use a bag of frozen "southern" style hash browns, much easier!!Also velveeta cheese and some evaporated milk & some sour cream makes it OOH So GOOD!! No vinegar

I have found that adding ground Cayenne pepper can help add more depth of seasoning. I add some,then taste, then add more if needed. I'd start with 1/3 to 1/2 teaspoon ground Cayenne pepper until you reach the amount of seasoning you wish to achieve..I wonder what a dash of Worcestershire sauce would do to add a little more flavor?

Whenever I make potato soup I add some fresh or frozen broccoli, 1 can of cream style corn, and if you have leftover grilled chicken breast throw that in the soup pot also. Then you can call this Potato, broccoli, chicken soup. It tastes awesome!

Needs more flavor you say? Add a bit more salt and chop up about 6 strips of crispy fried bacon. You gotta have the bacon to pull off this soup!

This is one of the easiest and most wonderful soups. It is so very easy even if you think you are not that great of a cook. I serve mine with a loaf of French bread, we just tear and dip. I would make sure and mix a bit of the milk with the flour before adding the flour to the hot liquids. And make sure you use shredded cheese. I was making this once and had block cheese and didnt shred it, just chunked it up and threw it in. It turned out greasy and not as yummy. I ended throwing most of it out, no one wanted to eat it.

Wouldn't you need to add a small amount of milk to the flour before stirring it into the hot soup? Otherwise, it would cause it to be lumpy.

I agree! I recently went to a famous drive threw (P) and asked what the soup for today. She expressed Potato soup with Bacon, now I wanted a creamy soup just the bacon turned me off. She said you want be dispointed try it, and I did and the bacon took away from the soup to me. So this made me very happy hearing this receipt today, we will try it. Thanks.

I just started reading reviews and this sounds great. My sister can't eat bacon so I was pleased to find this one. I may need to fix part for her and put the seasonings in the half for me or as she would say, make two full pots as she really loves potato soup.
