Simple Turkey One-Pot

Why wait for Thanksgiving to enjoy those comfort tastes we all love? Toss everything together in your slow cooker and you'll have a complete one-pot turkey dinner without any work.
What You'll Need
- 1 (8-ounce) package stuffing cubes
- 1/2 cup hot water
- 2 tablespoons butter, softened
- 1 small onion, chopped
- 1 (4-ounce) can sliced mushrooms, drained
- 1/4 cup sweetened dried cranberries
- 1 (3-pound) boneless turkey breast
- 1/4 teaspoon dried basil
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 6 carrots, cut into 1-inch chunks
What to Do
- Coat a 3-1/2-quart (or larger) slow cooker with cooking spray.
- Place stuffing cubes in cooker and add water, butter, onion, mushrooms, and cranberries; mix well. Sprinkle turkey breast with basil, salt, and pepper.
- Place turkey over stuffing mixture then place carrots around turkey. Cover and cook on low setting 7 to 8 hours.
- Remove turkey to a cutting board, and slice. Place carrots on a serving platter. Stir stuffing until thoroughly mixed and allow to sit 5 minutes. Spoon onto platter with carrots and serve with sliced turkey.

Hi there! We do not recommend cooking two 3-pound turkey breasts in a round slow cooker on top of each other. If you have a rectangular slow cooker, then you can cook the turkey breasts side by side.

This was FABULOUS! In fact so much so that my hubby suggested we make it for Thanksgiving. Honestly as we get older, we love dinners that not only taste so good but are easy, not time consuming and also quick clean up.....this has it all. The stuffing was perfect - PLEASE, stuffing should be mushy! The only difference I did was to use fresh green beans I will add that it's a little tenuous trying to get the veggies out so you can mix up the stuffing, but other than that, looking forward to this on the 26th! Only thing I will do is maybe have some baked sweet potatoes on the side nuke those and make my homemade cranberries. Truly a keeper for Turkey dinner year round! BTW, the frozen breast I bought from Walmart even had a gravy packet in it! Thanks!

I am making this for a 2nd time for xmas...and this is what i found from making it for thanksgiving...the carrots do not come out good...so dont use them...if you use stuffing cubes, it comes out perfect....no stove top...plus I omitted the mushrooms...and subbed the water for chicken broth....it came out perfect...the turkey was great, and so was the stuffing...will make this again and again!!

Tried using stove top stuffing mix, does not work gets too mushy. Stick to larger stuffing bread cubes. Other than that taste delicious

Cube up some bread. Drizzle a bit of melted butter or oil and add a bit of crumbled sage, pepper, parsley, chicken base. Toss together to mix and spread single layer on a baking sheet. Bake at low temp until slightly crunchy. Voila!! Now you have your own seasoned stuffing cubes and you control the seasoning. To make unseasoned, let a few slices of bread get stale by setting out on counter on a paper towel. Crumble/cube the next day. Voila!! Unseasoned bread cubes/croutons. Don't buy these at the store. They are using up their stale bread, too.

If I can't find stuffing cubes at the grocery store, can I substitute with a box of "Stove Top Stuffing" in a box.?

Thanks for your question. You can use a box of stuffing mix, just don't add the seasoning packet, since this recipe already includes seasoning.

you can find stuffing cubes in the bread dept usually on bottm self it's just bags of stuffing like you buy for stuffing turkeys but they are in little cubes

In the recipe you call 1/4 sweetened dried cranberries. I am hoping it is 1/4 cup but could it be 1/4 lb?
